August 1997 Recipe
Zucchini Bread
3 eggs (or equivalent amount of egg substitute)
1 cup Applesauce
2 cups sugar
2 cups grated zucchini (peeled or unpeeled)
1 tbsp. vanilla
3 cups self-rising flour
1 tbsp. cinnamon
1/4 tsp. nutmeg
1 cup chopped nuts
1 cup chopped dates (optional)
Blend eggs, oil, sugar, zucchini, and vanilla in large mixing bowl. Combine dry ingredients and nuts; stir into zucchini mixture. Pour into two greased & floured loaf pans. Bake at 350 deg. until golden brown and toothpick inserted in center comes out clean -- 60 to 75 minutes. Cool for 5 minutes before removing from pan, then complete cooling on wire rack.


September 1997 Recipe
I have not specified a fruit for you to use -- after all, you know what you like to eat. A few suggestions are peaches (my personal favorite), apricots, cherries, blueberries, blackberries, or apples. If you are watching your weight, you can use skim milk to lower the fat and an artificial sweetner in place of the sugar. You can use fresh, canned, or frozen fruit in this recipe. I hope your family enjoys it as much as mine.

EASY FRUIT COBBLER
1 stick of butter melted in a 9x9in glass baking dish
1c. flour
1c. sugar
1c. milk
3tbls. brown sugar
1tbls. oil
4-5c. fruit of your choice

Preheat oven to 350 degrees (Farenheit). Combine flour, sugar, milk, brown sugar, and oil in a medium mixing bowl. (This mixture will be runny - don't be alarmed!) Pour flour mixture into the baking dish. Add fruit. Bake for 40 minutes.

October 1997 Recipe
Chili - This one is HOT!
1 2/3 c. V8 Juice
1 6oz. can tomato paste
1 16oz. bag light red kidney beans
1 green bell pepper chopped
1 small onion chopped
1 tbsp. crushed red pepper
1 tsp. chili powder
1 tsp. black pepper
1 tsp. garlic
1 tsp. paprika
1 lb. ground beef
Prepare kidney beans according to package directions, drain, and return them to the pot. (If you are pressed for time
you can use two cans of precooked beans.) Brown ground beef and add to beans. Add remaining ingredients and simmer for
20-30 minutes.
Serve with cornbread or crackers.


November 1997 recipe
Cornbread
1c. self-rising flour
1c. self-rising white corn meal
1 egg
1/2c. buttermilk
Preheat oven to 425 deg. Combine all ingredients in a medium mixing bowl.
Mixture will be grainy. Pour into greased pan (10" round or 8"x8" square).
Bake for 15-20 minutes (until golden brown).
There was no recipe for December, 1997. Sorry -- I got caught up with Christmas!


January 1998 Recipe
Apple Candy Pie
Taken from "Best-Tasting Healthy All-Time Favorites" published by CPG, Inc.

Take 4 to 6 medium sized apples, thinly sliced in a well-buttered pit plate. Season each layer
with a mixture of cinnamon and sugar. Over the top spread a
mixture of the following ingredients, all creamed together:
4 tbsp. light butter
1/2 c. sugar
1 beaten egg
1/2 c. flour
1/2 c. broken nut meats (your choice of nuts)
Bake at 350 deg. for 50 minutes.
You can assemble the night before; you can also freeze the topping. Use aluminum foil under pan while baking.


February 1998 Recipe

Brownie Stew
2lbs lean ground beef or turkey
2 cans pork and beans
1 med. onion chopped
2 tsp. salt
1/4 tsp. pepper
Brown meat and combine with other ingredients in a medium
saucepan. Bring to boil, then reduce heat and simmer for 15 minutes.
This is a quick and easy main dish which my kids like better
than chili, because it's not so spicy hot.
There was no March 1998 Recipe due to an extended illness in the family.
