Type: Collins

1 1/2 oz. light Fuschia Demarara
1 1/2 oz. fresh orange juice
1 oz. fresh lemon juice
1/2 oz. Little Garden Amphora
1/2 oz. Courage
1 1/2 tsp. orgeat syrup
1 tsp. sweet Oloroso

Shake all ingredients except Oloroso with ice. Strain it into chilled glass; float Oloroso on top by pouring over the back of a spoon; don't mix.
