There are five proven special chocobos. They are the Mountain Chocobo(Green), the River Chocobo(Blue), the Mountain-River Chocobo(Black), and the Ocean Chocobo(Gold). I used a certain strategy for breeding these chocobos. Its as follows:

Green:

Catch 4 chocobos near Mideel and send them to your stables. Save the game. Talk Chocobo Billy and pick out 2 great chocobos. This is why I saved: make sure you have a male and a female chocobo(if you did not catch a male and a female great chocobo, restart the game by pressing L1+L2+R1+R2+Select+Start). Once you have a male and a female, go to the Chocobo Sage and buy 99 Sylkis Greens and 99 Reagan Greens. Feed the male 49 Sylkis Greens and 1 Reagan Green. Do the same for the female. Your chocobo stats should be maxed. Take them to the Gold Saucer to race. With your stats maxed you should easily beat the C-class and B-class chocobos. When you get to A-class hit SELECT at the beginning of the race to control the chocobo manually. Hold L1+L2+R1+R2 to recharge your stamina bar. This will elongate your stamina. I normally use my entire bar until I get to the top of the spiral( one note: if you race the short race, you gain classes just as fast as if you raced the long races). Let your bar recharge in case you are racing TEIOH because even though you are ahead of him, he CAN catch up to you, it has happened to me on numerous occasions.You should be able to beat the A-class in about 4 tries, considering TEIOH raced you once. YOU DO NOT HAVE TO RACE IN THE S-CLASS TO BE AN S-CLASS CHOCOBO! Repeat for the other chocobo. Once both are S-class, go back to the Cocobo Farm and mate with a Carob nut. [Carob nuts can be found on a monster named Vlakadoris (or something pretty close). He is on an island near the Bone Village(he looks like a raptor almost). Steal the Carob nut from him then kill him. Do this until you have 3.] If you do not receive a Green or Blue Chocobo, restart the game and repeat until you do.

Blue:

Take one of the chocobos and go to Mideel and fight for about 10 minutes. Get the other chocobo and do the same. SAVE after you fight with the chocobos!! Return to the Chocobo Farm. Mate the 2 with a Carob Nut. Make sure the baby is the opposite of what you first received(if you received a male Green Chocobo, make sure it is a female Blue Chocobo).

Black:

Go to the Chocobo Sage and buy as many Sylkis Greens and as many Reagan Greens as needed to get 99 of each. Go back to the Farm and feed 49 Sylkis Greens to the Green Chocobo(there is no order to do this in) and 1 Reagan Green. Repeat for the Blue Chocobo. Go to the Gold Saucer and race both till they are in S-class. Go back to the Farm and SAVE! Mate the two with a Carob Nut. [If Chocobo Billy won't let you mate them, take each one out individually and fight with them near Mideel.] You should receive a Black Chocobo.

Gold:

Go to the Chocobo Sage and buy as many Sylkis Greens and as many Reagan Greens as needed to get 99 of each. Feed the Blach Chocobo 49 Sylkis Greens and 1 Reagan Green. Go to Icicle area where you catch wonderful chocobos and catch 4. SAVE here! Go back to the Farm and move one that is a Wonderful Chocobo. [If you did not catch a Wonderful Chocobo, go back and catch 4 more, and SAVE after.] Make sure the Wonderful Chocobo is the opposite sex as your Black Chocobo. Feed the Wonderful 49 Sylkis Greens and 1 Reagan Green. Go to Goblin Island and steal 1 Zeio Nut from the Goblins there. Go to the Gold Saucer and SAVE before entering Corel. Race both to the Black Chocobo and the Wonderful Chocobo to S-class. Go back to the Farm and SAVE before entering! Mate the two with the Zeio Nut and you should receive a legendary Gold Chocobo. Feed it 99 Sylkis Greens to max out its stats.
