Broccoli With Mornay Sauce


1 BunchBroccoli florets
1/2 CupOnion, diced
2 TbspButter
3 TbspFlour
2 CupsMilk
1/4 CupSwiss Cheese, grated
1/2 TspSalt
1/8 TspPepper
1/4 TspNutmeg
1/4 CupParmesan Cheese
1/4 CupBread Crumbs
2 TbspButter, melted

1) Cook broccoli in boiling salted water for 5 minutes or until almost tender. Refresh under cold water. Drain well.
2) Saute onion in butter for 3 minutes.
3) Add flour. Stir constantly over low heat for 1 minute.
4) Add milk, shisking constantly. Cook over medium - high heat, whisking constantly for 5 minutes. Mixture will thicken.
5) Stir in swiss cheese, salt, pepper and nutmeg.
6) Coat bottom of 1 - 1 1/2 quart casserole dish with sauce. Arrange broccoli over sauce. Pour remaining sauce over florets.
7) Combine parmesan and bread crumbs. Sprinkle over casserole.
8) Drizzle with melted butter.
9) Bake uncovered at 375 F for 20 - 25 minutes or until lightly browned.
