Lasagna


20Tomatoes, fresh, whole
2 CansTomato Paste
3 TbspBrown Sugar
1 TbspOregano
1 TbspBasil
2 TbspParsley
1 TspRosemary
1 TspTarragon
1 TbspGarlic, minced
1/2Onion, small, diced
1 ContainerCottage Cheese or Sour Cream
1 LbLean Ground Beef
1 Brick, bigMozzarella Cheese
3 ContainersRiccotta Cheese
3Eggs
1/2 PkgLasagna Noodles
1/4 CupParmesan Cheese
Garlic Bread

1) Wash tomatoes and cut up, discarding waste.
2) Boil in a big pot.
3) When liquifying add in rest of tomato sauce ingredients. Continue boiling slightly.
4) Meanwhile boil lasagna noodles, partially, and brown ground beef.
5) Meanwhile, combine ricotta cheese with eggs and set aside.
6) Meanwhile, grate the mozzarella cheese.
7) Cool cooked lasagna noodles under cold water.
8) After draining ground beef, for smoother meat, mince in food processor or blender. Add to tomato sauce
9) Line lasagne pans with meat mixture, layering lasagne noodles on top.
10) Spread ricotta cheese on lasagne noodles and sprinkle grated mozzarella cheese on top, layering lasagne noodles on top.
11) Spread tomato sauce over lasagne noodles, sprinkling mozzarella cheese over sauce. Can repeat layer, but might require a couple of extra cans of tomato sauce.
12) Sprinkle rest of mozzarella cheese on top of lasagne sprinkling parmesan cheese over lasagne.
13) Bake in preheated oven at 400 F for 1 hour, uncovered on middle rack.
14) Freeze any leftover lasagne.
