STRAWBERRY-SPINACH SALAD WITH SUGARED ALMONDS

Preparation Time: 15 minutes

Cooking Time: 6 min.

Serves: 8

Ingredients & Preparation

Dressing:

2 tbsp                raspberry or red wine vinegar

1/4 c                   vegetable oil

1 tbsp                worcestershire sauce

1 tbsp                white sugar

2 tsp                   poppy seeds

1 green onion finely chopped

1/2 tsp                salt

pinch of paprika

Place all ingredients in a jar - seal & shake. Dressing can be left at room temp up to 1 day or in fridge for up to 3 days.

 

Salad:

1/2 c                 slivered almonds

1/4 c                 sugar

2 tsp                 water

                       10-oz bags spinach or 3 large bunches

2 c                     sliced strawberries

Oil large sheet of foil. Add almonds water & sugar to med frying pan and stir over med. heat till sugar melts. When light golden, stir constantly with wooden spoon and coat almonds. Pour out onto foil and when cool break into pieces. Will keep in fridge 2 days

Add nuts and berries to spinach and toss with dressing.
