PINEAPPLE PARFAIT  – Serve 2

 

175ml (3/4c) Vanilla yogurt

125 ml (1/2c) granola

125 ml (1/2 c) crushed pineapple in own juice

45 ml (3 tbsp) grated coconut, toasted

 

In parfait dish or tall glass place ¼ of the yogurt

Top with a speinkle of coconut, ¼ of the pineapple, a bit more granola, yogurt, pineapple and coconut

Repeat in second glass for 2 servings
