PECAN PIE (from The Joy of Cooking)
 
(This pie may be made with walnuts - My friend Mary uses 1/2 pecans and 1/2 sugar coated pecans)
 
Preheat oven to 450.
Prepare an unfilled pie shell and bake partially (5-7 min) Allow to cool.
Reduce oven heat to 375.
Cream:
    1/4 c butter
    1 c firmly packed brown sugar
Beat in:
    3 eggs
Sit in:
    1/2 c light corn syrup or molasses
    1 to 1 1/2 c broken pecans
    1 tsp vanilla or 1 tbsp rum (Mary used rum)
    1/2 tsp salt
Fill the shell. Bake the pie about 40 min. or until a knife inserted in the pie comes out clean.
Serve warm or cold with or without whipped cream.
