Lemon Asparagus Linguine

Yummy!

 Serves 4

Prep Time  - 20 min

Cooking Time: - 10 min

 

1 pkg (450g) linguine or bow tie pasta

2 (550 g) bunches of asparagus (1 lb)

1/3 c (75ml) margarine or butter

1 c 35% whipping cream

3 tbsp (45ml) freshly squeezed lemon juice

1 tsp (5ml) freshly grated lemon peel

2 c (500ml) freshly grated mozzarella cheese

 ½ c freshly grated parmesan cheese

½ c (125 ml) coarsely chopped fresh basil or parsley leaves

freshly ground pepper

 

Bring water to boil over high heat. Add past and cook till done (approx. 6 min for linguine)

Snap off ends of asparagus. Add to water and cook till bright green. (2 min?)

Drain, don’t rinse pasta.

Return to burner at med-high and add butter, cream, lemon juice

Then add pasta and asparagus.

Add remaining ingredients and stir and cook approx. 2 min.

Add pepper to touch.

Spoon into warmed bowls.
