FAST FIX GREEK PIZZA

Pre-heat oven  to: 475

Preparation Time: 10 minutes

Baking Time: 12 minutes

Makes: 8 slices

Ingredients

12" (30 cm) or 2 8" (20 cm) pita bread

1/2 c (125ml) sour cream or plain yogurt

1 red onion

2 marinated artichoke hearts

200-g pkg. Greek-style shredded cheese (see below if not available)

1/2 c (125 ml) kalamata olives, pitted and drained

 

Method of Preparation:

Place whole pita on baking sheet.

Spread sour cream over top of pita, right ot edges.

Cut onion in half lengthwise and place cut-side down on cutting board and thickly slice.

Pat artichokes dry with paper towel and then coarsley chop

Sprinkle half of onion over sour cream and top with half the cheese.

Cover with remaining onion, artichokes and olives.

Sprinkle remaining cheese over all.

bake at 475 (240C) until cheese is completely melted, approx. 12-15 minutes.

Note* If you don't have the greek cheese make your own by mixing:

 2 cups crumbled feta, 1 tablespoon finely chopped sun-0dried tomatoes, 1 1/2 teaspoons dried leaf oregano and 1/2 teaspoon freshly ground black pepper.
