Ok..here is one of my favorites "Crab Quiche" below..but before we start: 

Just in case some skinny people read this recipe, drool for days and finally fail to resist the temptation, I will set you up with a skinny recipe to train on for a week so you can eat the Quiche with a clear conscience.

This is so simple it hardly needs a recipe.



CARROT SALAD
(with a twist)

Ingredients:

Carrots  (Duh) 1 lb (about)
Raisins

1cup

(minus the dozen or so that drift to you in process)

Mayonnaise ½ cup
Dried Strawberries ½ cup
Dried Apricots ½ cup
Pistachio Nut meats

½ cup


Preparation:

Fat people use a food processor to shred the carrots.
(hand chopping is just too much work)
Skinny people please shred the carrots by hand.

Chop the dried strawberries and the apricots.
Add to the carrots in a large mixing bowl (what else?).
Add the pistachio meats and the mayonnaise.

Stir well and chill for an hour in the fridge.

That's it!

Now you can go on with the Crab Quiche...



This recipe is for six quiche (or is it quiches ?) 

They freeze well and the aroma is designed to make skinny people drool and forget their diets.

I cheat and use ready  made deep dish pie crusts....but suit yourself.  It is just as easy to do six at a time as one, so you can save a few for "lazy days"




CRAB QUICHE


Ingredients:

Ready Made Pie Crusts Frozen You will need 6 of them (10 inch)
Canned Crab meat 4 x 6 ounce cans
Bacon ½ lb
Grated Cheddar Cheese 8 ounces
Grated Mozzarella Cheese 16 ounces
Eggs 6 medium
Mushrooms 8 ounces (canned sliced)
Whipping Cream  1 quart   (whoopee)


Preparation:

Wash out the big mixing bowl you used for the carrot salad.
Combine the crab, mozzarella, eggs, mushrooms and whipping cream.
Stir well.

Thaw out the pie crusts, poke several small holes in their lil bottoms.
Crisp up the bacon and chop into small pieces.
Sprinkle the bacon over the pie crusts.

Pour equal amounts of the combined ingredients over the bacon bits.
Top the pies with the grated cheddar.

Cook in a slow oven (300° F) for one hour.
Let sit (if you can) for ½ hour before serving.

Oh yes..the pies tend to cook over the top on occasion.
Save yourself an oven cleaning job with a baking pan or aluminum foil.
