Vegetarian Mock-chicken Noodle

You need:
1 Package of Melissa’s Grilled
Chicken Flavored Veggi-Strips
2 packages of Ramen Noodles
1 package of salad (choose one that
appeals to you)
1 tomato (any kind you like)
3-12 baby carrots (or more if you
really like carrots)
Coriander
A handful of flour
Thyme
Salt and pepper
Vegetable oil
Put the noodles in a microwave-safe
bowl with a little water (don’t use the flavor packs, those use real meat
products). Pop them in the microwave for
about 3 minutes on high (they will be just a little hard when they come out, and
that’s what you want).
Pour the contents of the veggi-strip pack into a bowl with a handful of flour, a
generous sprinkle of coriander (in fact, put in as much as you want, because it’s
great!), a sprinkle of dried thyme, and a little salt and pepper if you like
it. Cover the strips with the mixture.
Pour a bit of vegetable oil onto a
frying pan and drop the strips in. Using
medium heat, move them around until all sides turn gold (you may or may not
need more oil).
Take a generous handful of the salad
and put it on the plate (Do this for each person you will be serving, this will
make a large salad for up to 4).
Drain the noodles and run cold water
through them. Then lay a handful of them
on top of the salads. You can leave it
on the top or mix them into the salad.
Take a portion of the veggi-strips and place it on each salad. Cut the tomato (slice or dice) and arrange on
top of salad. Add 3 carrots to the top
of each salad.

You may use any dressing you like,
depending on your dieting needs.
