Pleyn Delit - Medieval Cookery for Modern Cooks by Constance Hieatt and Sharon Butler . Published by University of Toronto Press. ISBN 0-8020-6366-7

This is a terrific book. It contains a glossary, first rate bibliography, recipes in their original form as well as a very workable modern version with commentary. This was one of the first books I purchased and would recommend it to any new cook.

There is also an interesting section on subtleties (food that doesn't look like food) that explains how to make a pastry castle as described in The Forme of Cury.

To the best of my knowledge, this book is still in print.
