BBodacious' Knighting Ceremony!
Once again, the Jedi Temple on Coruscant is decked out for a Knighting Ceremony! This time however, the Temple Kitchen and Dining Room is the location for the assembled Masters, Padawans, Sith and other well wishers. Everyone takes their seats and waits with anticipation as the lights dim over all but two well stocked kitchen areas. Then, two chefs arise from hidden, but rising platforms. Master Emi arises and addresses the audience.

"I wish to thank everyone for coming today for this aupicious occasion - the Knighting of BBodacious! And to make her Knighting ceremony special (and tasty!), I have invited Jamie Oliver and Emeril Lagasse to prepare today's banquet!




*The two chefs step up to the cooking areas and begin to prepare tasty confections to the amazement and delight of the audience*

Emeril prepares Fresh Strawberry Ice Cream (much to Emi's delight ;) :D )

Recipe courtesy Emeril Lagasse, 2000

1 quart fresh strawberries, washed, stemmed and quartered
1 1/2 cups granulated sugar
4 cups half-and-half
1 cup granulated sugar
1/2 vanilla bean, split in half and scraped
6 egg yolks
In a food processor or blender, combine the strawberries and 1/2 cup of the sugar. Process until smooth. In a saucepan, over medium heat, combine the half-and-half and sugar. Bring to a simmer. In a small mixing bowl, whisk the egg yolks until smooth. Add 1 cup of the hot liquid to the egg yolks and whisk until smooth. Add the yolk mixture to the saucepan of liquid and whisk until incorporated. Bring the liquid back to simmer and continue to cook for 4 to 6 minutes or until the mixture coats the back of a spoon. Remove from the heat and stir in the strawberries. Whisk until smooth. Pour the mixture into a glass bowl and place a piece of plastic wrap directly on top of the mixture. This will prevent a skin from forming while cooling. Cool the mixture completely. Process the mixture according the ice cream machines instructions.

Yield: about 1 1/2 quarts ice cream
Prep Time: 5 minutes
Cook Time: 15 minutes

AND

Chocolate Sauce

Recipe from Emeril’s Creole Christmas, by Emeril Lagasse, with Marcelle Bienvenu, published by William Morrow, 1997

3/4 cup half-and-half
1 tablespoon unsalted butter
1/2 pound semisweet chocolate chips
1/4 teaspoon pure vanilla extract
Combine the half-and-half and butter in a small heavy-bottomed saucepan over medium heat. Heat the mixture until a thin paper-like skin appears on the top. Do not boil. Add the chocolate and vanilla and stir until the chocolate melts and the mixture is smooth. Remove from the heat and let cool. The sauce can be kept refrigerated for several days, but it must be returned to room temperature before serving.

Yield: about 1 1/2 cups

Jamie Oliver has this to offer...

Chocolate Fridge Cake

Recipe courtesy Jamie Oliver

5 1/4 ounces (150 grams) digestive biscuits
3 1/2 ounces (100 grams) pecans
3 1/2 ounces (100 grams) pistachio nuts
10 glace cherries
2 ready made meringue nests, crumbled into small pieces
5 1/4 ounces (150 grams) butter
1 tablespoon golden syrup
7 ounces (200 grams) good quality chocolate
Cocoa powder, for dusting
Break the biscuits into small pieces directly into a large bowl. Add the pecans, pistachio nuts, cherries and bits of meringue. Put the rest of the ingredients, except the cocoa powder, into a bowl and put over a pan of simmering water on low heat to melt.

Mix the ingredients together and place in the container which acts as your mold. To help with turning out, line a 12 by 8-inch (30 by 20 centimeter) container with cling film, first leaving plenty of extra film at the edges to fold over the top.

Leave in the refrigerator to firm up then turn out and cut into chunky slices. This cake can be kept in an airtight container and actually improves after a couple of days.

Difficulty: Easy

AND

Individual Quick English Trifle

Recipe courtesy Jamie Oliver

4 1/2 ounces (135 grams) raspberry gelatin
8 (1-centimeter) slices ready made sponge or Madeira cake
A good glug sweet Sherry
15 ounces (425 milliliters) ready made custard
6 ounces (175 grams) tinned mandarins
A few drops vanilla extract
1/2 pint (275 milliliters) double cream (heavy cream), lightly whipped
A small block good quality chocolate
Make the gelatin by following the instructions on the side of the packet. Pour into a dish and leave. Once the gelatin is set, roughly chop.

Put 2 pieces of cake into the bottom of each glass. Drizzle with the sherry and pour half of the custard over the cake and sherry. Spoon the gelatin over the custard, and then add the mandarins. Cover with the rest of the custard, drizzle with a little vanilla, and cover with the whipped cream. Scrape the chocolate with a sharp knife for shavings to top the lot.

Cook Time: 3 minutes
Difficulty: Easy



And of course, no celebration that Master Emi attends would be complete without....

Pumpkin Cheesecake with Bourbon Spiked Cream

Recipe courtesy Emeril Lagasse, 2000

1 1/2 cups vanilla wafers, crushed into crumbs
1 cup ground pecan pieces
1 stick melted butter
2 pounds cream cheese, softened and cubed
1 cup light brown sugar
6 eggs
1/2 cup heavy cream
1/2 cup all-purpose flour
Pinch salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 cups pumpkin puree
2 cups sweetened whipped cream
Dash bourbon
1 cup semisweet chocolate sauce, warm, recipe follows
Preheat the oven to 350 degrees F. Combine the crumbs, ground pecans and the butter together. Mix well and press into a 12-inch spring-form pan. In a food processor, with the metal blade, mix the cream cheese until smooth. Add the brown sugar and blend. Add the eggs 1 at a time to thoroughly incorporate into the cheese mixture. Add the heavy cream. Add the flour, salt, cinnamon and vanilla and blend until smooth. Add the mashed pumpkin and blend until smooth.

Pour into the prepared pan. Bake for 1 hour and 15 minutes or until the cake is set. Remove from the oven and with a knife loosen the sides from the pan. This will prevent the cake from splitting down the center. Completely cool the cake before cutting. Combine the whipped cream and bourbon together, blend well. Garnish each piece of cake with the Bourbon Whipped Cream and a drizzle of chocolate sauce.

CHOCOLATE SAUCE:
