Rich's Beans

 
Great on a blustery day, or as a side 
dish at a barbecue. 
2 jumbo size cans B&M (or similar) baked beans 1 lb. ground beef 1 lb. bacon 1 onion, diced 2 tsp. liquid smoke 1/3 c. prepared mustard 1/2 c. maple syrup 2 cloves garlic, minced Cook bacon to very crisp, drain & crumble lightly. Brown ground beef with onion and garlic. Mix with all the other ingredients. Bake, ucovered, at 350 1 hour. Ideal served with cornbread and a tossed salad.

Garlic Parmesan Dip & Dressing

The dip that made me famous, lol 
Blend in any order: 2 cups full bodied mayonaisse 2 cups sour cream 2 tsp worchestershire sauce 1/2 tsp rice or cider vinegar 1 tsp fresh ground pepper 2 T. dried dill weed 3 cloves garlic, pressed 3 T FRESH grated parmesan cheese A perfect dip for raw veggies or chips. To use as a dressing thin with a little milk.

Zuchinni Treat

 
The kids won't know the zuchinni's here! 
Preheat your oven to 350
Mix together:
1 c. Bisquick
1/2 c. parmesan cheese
2 T chopped parsley
3/4 tsp. seasoned salt
1/2 tsp. Italian seasoning
Add until just blended:
4 eggs, slightly beaten
1/2 . oil
Fold in:
3 c. shredded zucchini
1/2 c. chopped onion
1 clove garlic, minced 
Spread into greased 9" X 13" pan. Bake 
20-25 minutes, until top is just golden. 
Cool a few minutes before cutting into 
squares for serving. May be made ahead 
of time and either reheated or frozen up 
to 1 month.

Cheese Soup or Sauce

Easy and yummy! 
3 T butter or margarine 3 T flour 2 cups chicken broth 2 cups milk 1 cup grated sharp cheddar cheese 1 tsp worchestershire sauce 1/2 tsp dry mustard

Melt 3 T butter or margarine in a heavy saucepan. Add 3 T flour and stir to blend thoroughly. Slowly, and while stirring, add 2 cups chicken broth and 2 cups milk. Stir constantly until thickened. Add 1 cup grated sharp cheddar cheese, 1 tsp worchestershire sauce and 1/2 tsp dry mustard. For added zest use 1 cup flat beer in place of 1 cup of the chicken broth.

Yummy Meatballs 1

1 1/2 lbs Hamburger 
1 c. cracker meal 
1/4 c. milk 
1 egg 

salt and pepper to taste. Make into small balls and brown.

Sauce: 1 1/2 cup ketchup 5 T brown sugar 2 1/2 T vinegar 5 tsp mustard 5 tsp Worcestershire sauce

Preparation: Put browned meatballs into a baking dish pour sauce over to cover all. Bake at 300 for 1 hour. Or put in crock pot for the day.

Yummy Meatballs 2

1 1/2 lbs Hamburger 
1 c. cracker meal 
1/4 c. milk 
1 egg 
1 small white onion, diced finely
salt and pepper to taste.
Make into small balls and brown.

Sauce: 1 C Water 1/2 c sugar 2 lemons, sliced thin (with as much juice as possible) 1/2 c raisins

Preparation: Put all sauce ingredients in over the browned meatballs and cover, simmering, for 30-45 minutes or until meatballs are thoroughly cooked. Serve over steamed rice. (I find this is a good recipe for my electric skillet, but any skillet with a lid should do.)

Tangy BBQ Sauce

1/3 c. apricot & pineapple preserves
1/2 c. catsup
2 T. vinegar
2 T. Brown Sugar
1 T. worchestershire sauce
1/2 tsp ground ginger
1/4 tsp ground coriander
2 T minced onion

Preparation: Put all sauce ingredients in a small saucepan and simmer

Soda Cracker Pie

3 egg whites
1 tsp vanilla
1 C sugar
14 soda crackers, finely crushed
1/4 tsp baking powder
1/2 C chopped nuts, (I use walnuts)
1 tub Cool Whip

In a large mixing bowl, let egg whites stand at room temperature about 30 minutes. Add vanilla and beat with an electric mixer on med. Speed until soft peaks form. Add 1 C sugar, a bit at a time, beating on high speed until very stiff peaks form. Fold in mixture of crackers, baking powder and pecans. Spread in a greased 9 inch pie plate. Bake at 325 degrees for 30 minutes. Cool. Top with Cool Whip and serve. Serves 8
NOTE: Do NOT use unsalted crackers

Mock Apple Pie

One double pie crust 
1 dozen Ritz crackers 
1 cup (225 ml) sugar 
3/4 tsp (4 ml). cinnamon 
1-1/2 tsp (7 ml). cream of tarter 
1-1/2 cups (350 ml) water 
1 tbsp (15 ml). butter 

Preheat oven to 475 degrees. Place one pie crust in an 8" pie pan. Break crackers into pieces (about 4 per cracker) and place crackers in the pan. Mix remaining ingredients and pour over the crackers. Seal on the topcrust and bake for 20 to 30 minutes. Cut holes in your top crust just like you would for a fruit pie.
Note: for a 9" pie pan, go 1 1/2 times the ingredients.

Potato Pancakes

Ingredients : cold water 4 large potatoes (peeled) 1 small onion 2 eggs 3 medium cloves of garlic 1/3 cup of flour 2 teaspoons salt 1/8 teaspoon pepper 1/3 cup oil parsley sprigs for garnish

Instructions: Grate potatoes into cold water and add finely sliced onion. Put clean towel into colander and add potatoes and onion. Let drain in sink. Pick up ends of towel and wring remaining water from potatoes and onion. In a large bowl beat eggs, add potatoes, flour, salt, pepper, crushed garlic and toss together until well mixed. In hot skillet with the oil (bacon fat is better) drop in mixture by amounts of whatever size you want cakes to be. Flatten down mounds and cook about 4 minutes+ per side . ( or till golden brown as they say. )

Magic Salad

 
Great on a hot summers day as a main course, or as a side. 
2 to 4 large tomatoes, diced into chunks 1/2 cucumber, diced 2 T minced parsley 1/2 cup red onion, diced 1/2 cup sliced black olives, (but green might be good too) 1/2 cup frozen corn, defrosted and drained 1/2 c. diced avocado 1 clove garlic, minced 1/2 cup diced cheddar cheese 10 slices salami, sliced
Toss all the ingredients with your favorite vinegarette dressing or make the one I have with my favorite ham and cheese sandwich on the next page.
This is great with french bread or garlic toast if served as a main course.

Instant Potato Pancakes

don't know why it works, but it does 
Prepare an envelope of roasted garlic instant mashed potatoes according to the package direction Let cool completely. Add to the cooled potatoes: 1 egg, slightly beaten 1/4 cup finely diced onion 2 Tablespoons flour 1/4 tsp fresh ground pepper 1/2 tsp seasoned salt Fry in a bit of oil, turning when browned on bottom. Serve with sour cream.
