Peanut Butter Cookies
3/4 cup margarine 1 well-beaten egg 3/4 cup granulated sugar 2 cups all purpose flour 2 tablespoons peanut butter 1 teaspoon baking powder 1 teaspoon vanilla
Cream butter and sugar until light. Add peanut butter and eggs. Blend well. Sift flour and baking powder 3 times to mix well. Add flour and vanilla to creamed mixture. Mix well. Make balls and smash with a fork or meat tenderizer dipped in water or flour to 1/2" thick. (You can press them with a cookie press). Put on greased cookie sheet and bake at 350° for 8-10 minutes. This was Grandpa's favorite cookie!
Rolled Sugar Cookies
4 cups flour 1/3 cup milk 1 teaspoon baking powder 1/2 teaspoon salt 1 cup shortening 1 teaspoon vanilla 1 heaping cup sugar 2 or 3 eggs 1 teaspoon baking soda
Mix flour, baking powder, salt, and shortening as for a pie (you can use a pastry cutter, two knives, or shake in a sealed container for 2-3 minutes until crumbly). In another bowl place the soda and sugar. Add egg, milk, and vanilla to soda and sugar mix, beat well. Put flour and milk mixtures together and stir until smooth. Roll out and cut. Bake at 350° for 10 minutes or until lightly browned on the bottom. You can decorate with colored sugar before baking or put on icing once cooled.
Sour Cream Cookies
1 cup butter or shortening 2 cups brown sugar 2 eggs 1 cup sour cream (you can substitute evaporated milk with 1 tablespoon of vinegar or lemon juice in it) 3 tablespoon preserves (any fruit) 4 cups sifted flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon nutmeg.
Cream shortening, sugar, and egg until light and fluffy. Add sour cream and preserves. Sift dry ingredients into liquid mixture and stir. Drop by spoons on greased cookie sheet. Bake 15 minutes at 400°.
No-bake Chocolate Fudge Cookies
2 cups sugar 1/2 cup butter 1/2 cup cocoa 1/2 cup milk
Place in saucepan and bring slowly to hard boil for 2 minutes, remove from heat and add 1/2 cup peanut butter and 2 1/2 cup oatmeal, uncooked. Drop by spoon on buttered surface, cool.
Molasses Drop Cookies
1 cup sugar 1 cup molasses 1 egg 3 1/2 cups flour 1 teaspoon cinnamon 1 teaspoon ginger 1 teaspoon soda 1/2 cup cold water 1 cup raisins 1/2 cup butter.
Cream butter and sugar, add molasses, beaten egg. Sift dry ingredients. Add alternating with water. Stir in chopped raisins. Drop on buttered sheets and bake at 350° for 8 min.
