Excellent Chocolate Cake
1 1/2 cup sugar 1/2 cup (one stick) butter
2 squares unsweetened chocolate (or 4 tablespoons cocoa and two tablespoons melted butter)
1/2 cup milk 2 cups flour
1 teaspoon soda 1 teaspoon baking powder
3 eggs, separated
Cream sugar and butter. Put chocolate with milk and heat until it thickens. Combine beaten egg yolks and milk mixture. Combine dry ingredients and add to milk mixture. Fold in stiffly beaten egg whites. Bake at 350° for about 45 minutes (less if layers or cupcakes).
Lone Sugar Cake
1 3/4 cup flour 1/2 cup butter
1 1/2 teaspoon soda 4 tablespoons sugar
1/2 teaspoon salt 1 tablespoon corn syrup (clear)
2 egg yolks unbeaten 2 squares unsweetened chocolate
2/3 cup milk 1 teaspoon vanilla
2 egg whites
Sift flour once and measure. Add soda, salt, sift 3 times together. Cream shortening and sugar. Add a quarter of the flour mixture and beat smooth. Add egg yolks one at t time, beating well after each. Add chocolate and blend. Ad remaining flour in thirds alternating with milk in halves. Beat well after each addition. Ad vanilla. Beat egg whites until they hold up in moist peaks. Stir quickly but thoroughly into batter. Bake in 2 greased 9" layer pans. Bake at 350° for 25 minutes.
Poor Man's Chocolate Cake
Mix 1/2 cup water with 1/2 cup cocoa and 1/2 cup sugar. Cook 3 minutes or until thickened. Cream 1/2 cup shortening (or lard) and 1 cup sugar. Add 2 beaten eggs to cooled cocoa mix. Add 1 up water and 2 cups flour, 1 teaspoon each of soda, salt, and baking powder. Add teaspoon vanilla. Bake in loaf or layer pans.
Home Spun Spice Cake
1/2 cup shortening 2 eggs
1 1/4 cup sugar 1 teaspoon allspice
2 cups flour 1 teaspoon cinnamon
2 1/2 teaspoon baking powder 1 teaspoon vanilla
1 teaspoon baking soda 1/2 teaspoon each salt and mace
1 1/4 cup sour milk
Cream shortening and sugar. Stir in each egg vigorously. Alternating fold in sifted dry ingredients and sour milk to which spices and vanilla has been added.. Divide batter between layer cake pans and bake 350° for 30-35 minutes.
Potato Chocolate Cake
2 cups sugar 1 cup nuts 2/3 cup butter 1 teaspoon cinnamon
1/2 cup milk 2 cups flour 2 cups cocoa 1/2 teaspoon nutmeg
4 eggs separated 1 cup mashed potatoes
2 1/2 teaspoons baking powder
Cream butter, sugar, and potatoes. Then add beaten egg yolks and milk. Sift dry ingredients and add to liquids. Add nuts, then stir in beaten egg whites. Bake at 350° for 30-35 minutes
