Best Bacon Potato Salad

This potato salad is the quick way to make it.
Because you will cook the potatoes
in the microwave and then peel them.
6-8 medium Idaho potatoes
6 slices of bacon
1 1/2 teaspoons of garlic powder
1 !/2 teaspoons of onion powder
1 &1/2 cup Blue Plate mayo
1/2 cup of creole mustard
1/2 cup yellow mustard
1/2 cup sweet relish
1 cup finely chopped onion
1/2 cup finely chopped green pepper
1/2 cup finely chopped red bell pepper(optional)
(gives great color and taste)
4-5 boiled eggs chopped
Tony Chacherie's seasoning
Bacon Grease
Salt & Pepper
green or black olives(optional)
I personally do not use olives but you can
if you like olives in your potato salad.
Punch holes in the raw potatoes
(it keeps them from exploding)
Put into microwave with peels on
for about 6-10 minutes or until tender
Remove potatoes and place them
into a bowl of cold water.
Set aside.
Fry 6 pieces of bacon
and put the grease aside.
Chop the bacon into small pieces.
Boil 4 -5eggs
Chop all bell peppers and onion.
Chop boiled eggs
Take potatoes out of the water
and get small knife to peel the potatoes
as you run cold water over them as
peeling (if they are still hot)
Place them into a large bowl when peeled.
Chop potatoes into medium pieces.
Then add all other ingredients into the bowl
Add mayo and mustards & relish and stir.
Then add all bacon grease and
eggs and chopped bacon and stir.
Add garlic powder & onion powder
Add salt and pepper to taste.
(if you desire you may add chopped olives
to your salad)(optional)
Sprinkle lightly Tony Chacherie's seasoning
on top of potato salad for spice and color.
