Mexican Tortilla Casserole

1/4 c. chopped onion
2 lbs. ground beef
2 (14 oz.) cans stewed tomatoes
1 pkg. taco seasoning
2 c. shredded Cheddar cheese
1 (2 1/2 oz.) can chopped black olives
1 (12 oz.) pkg. cheese flavored tortilla chips
1/2 lb. shredded Mozzarella or Cheddar cheese
(your choice)
1 c. sour cream and chives
4 fresh chili peppers or 2 fresh
bell peppers chopped

Brown ground beef with onion over
medium heat, stirring frequently.
Drain fat.
Blend in tomatoes, taco seasoning,
chili or bell peppers, and black olives.
Simmer about 1/2hour or until thick.
Lay 2/3 of chips over
bottom of lightly greased
9 x 13 inch baking pan.
Add all of meat mixture.
Top with Mozzarella or cheddar cheese.
Top with sour cream.
Top with rest of chips,
slightly crushed.
Bake at 350 degrees
for 30 minutes.
Sprinkle Cheddar cheese
on top and continue baking
until cheese melts. About 3-5 min.
Let stand 5 minutes before serving.
