Crispy Cheesy Chicken


Six chicken breasts fillets (cut into squares)
3/4 cup cooking oil
1 chopped onion
1/2 green bell pepper
1/2 red pepper(optional,
but gives color and flavor to the recipe.)
I small can mushrooms
(whole or sliced--optional)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin powder
1/2 teaspoon lemon pepper powder
1 teaspoon chicken seasoning powder
1/4 cup bread crumbs
1/2 cup -1 cup flour
1/2 cup cheddar cheese
1/2 cup american cheese
2 cups milk or cream
1 tbls. butter or margarine
salt & pepper
1/4 tbls. Tony Chachere's powder
3 cups rice cooked

In a bowl add cubed chicken breast
Salt & Pepper to taste
Heavily sprinkle chicken seasoning,
garlic powder, onion powder, &
Tony Chachere's powder (lightly)
onto the chicken cubes
Cover cubed chicken seasoned
breast meat with bread crumbs
Then add 1 cup flour onto the chicken
and cover heavily on all sides
Heat cooking oil in frying pan
Add peppers and onions
Add mushrooms if any
Add floured chicken into the pan
Fry all ingredients until chicken is
crispy and fully cooked.


Into a seperate pot put the milk or cream
Add the cheeses and butter and
3 tbls. of flour
Add ALL seasonings to the cheese gravy
Salt & Pepper to taste
Stir and cook on low fire until desired thickness.
Set aside.
When chicken, onions & peppers are
fully cooked and crispy
pour over rice
and pour cheese sauce
over the chicken mixture.
Goes well with peas or carrots.
