Caribbean Chicken


Chicken breasts with a fruity marinade.
Preparation time: 10 minutes.
INGREDIENTS
  • 3 skinless, boneless chicken breasts
  • 1/4 cup orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons mango chutney
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon olive oil
  • 1/2 teaspoon hot pepper sauce
  • 1 teaspoon minced fresh oregano
  • 2 cloves garlic, minced
DIRECTIONS:
1. In a nonporous glass dish or bowl combine the orange juice, lime juice, chutney, ginger, oil, pepper sauce, oregano and cloves. Mix all together and add chicken. Toss to coat, cover dish and place in refrigerator. Marinate overnight.
2. Preheat grill to medium high heat or set oven to broil
3. Remove chicken from dish (dispose of remaining marinade) and grill or broil the chicken 6 inches from the heat source.

Bread Pudding-Diabetic Recipe
  • 6 Slices white bread crusts removed
  • 2 tablespoons reduced calorie Margarine,melted
  • Sugar substitute to Equal 3/4cup sugar (I use
  • Splenda Same as real sugar Measurements)
  • 1 teaspoon ground cinnamon
  • 1/2 cup Raisins
  • Veg. Cooking spray
  • 4 eggs, lightly beaten
  • 2 cups skim milk
  • 1 teaspoon vanilla
Break bread Spread melted margarine over bread .
Mix the rest of of ingredients together.
Bake at 350 degrees for 55 mins.
I double the recipe and instead of using 2 teaspoons of cinnamon I put 1 pumpkin pie spice and 1 Cinnamon spice
