100% Whole-wheat Bread- Part 2/New Toy

Most of the 100% whole-wheat recipes call for milk, a sweetener and fat. I am not sure about the role of sweeteners in bread as the yeast is capable of transforming the starch into sugars. I decided to make the bread using milk alone to see if there is any difference in texture and flavor as compared to a lean 100% whole-wheat bread. This time round, I cut the amount of yeast by half and I think that slowed down the yeast too much. The oven spring was lesser than in the lean version.
