Chicken Salsa Verde

Chicken Salsa Verde 1 package Simply Potatoes Southwest Style Hash Browns 1 (8-oz.) carton light dairy sour cream 1 ¼ pounds boneless, skinless chicken thighs 2 teaspoons dried mesquite seasoning 2/3 cup green salsa* 1 cup shredded Monterey Jack cheese Chopped ripe avocado, sliced green onion 1. Heat oven to 400 degrees F. Grease 13x9x2-inch baking dish. 2. Place potatoes evenly into baking dish; stir in sour cream until well mixed. 3. Rub both sides of chicken with mesquite seasoning. Arrange on top of potatoes; cover baking dish with foil. Bake 40 minutes. 4. Spoon green salsa evenly over chicken and sprinkle with cheese. Return to oven and bake 5 minutes longer or until cheese is melted. Garnish each serving with avocado and green onion. *Tomato salsa may be substituted Serves 4.
