MAMALEE'S CUCCUZI AND LAMB RECIPE
1 lamb roast
1 large can of tomatoes
1 chopped cuccuzi squash
1 large chopped yellow onion
3 large cloves of garlic minced
1/3 cup of quality olve oil
Brown lamb with garlic, onion and olive oil in a big pot or dutch oven
on top of the stove covered. After the lamb browns then you pour 1 big can
of tomatoes with juice around the lamb. Let cook approximatley 40 minutes.
You cut up the cuccuzi in cubes and cook about ten minutes until tender.
Add salt and pepper to taste.

MAMALEE'S FAVI BEANS AND SPAGHETTI
1lb of spaghetti of choice
2lbs of fava beans shelled
1 cup of peas with juice
1 whole chopped green onions
1 chopped onion
2 cloves garlic, minced
1/4 cup olive oil
1 pack of anis seeds
1 can of artichoke hearts drained
salt and pepper to taste
parmesan cheese to taste
In seperate pot boil spaghetti with salt until tender.
Boil fava beans first and save the water. Saute~ yellow
onion, and garlic first with the pack of anis
seeds. Then add the fava beans and anis seeds in with
the garlic and onion. The peas, green onions go next.
Add the peas, artichoke hearts and water from the fava
beans last. Simmer altogether.

MAMALEE'S CHICKEN, PEAS AND POTATOES
8 piece package of chicken drumsticks
2 cans of peas, 1 can of chicken of chicken broth (optional)
7 peeled and chopped in cubes potatoes
3 gloves of chopped garlic, 1 chopped yellow onion
1/4 cup of olive oil
In a big pot on the top of the stove, warm olive oil and slowly cook
and brown onion and garlic. After onion and garlic is tender then add
the chicken drumsticks. Cover and cook slowly while stirring. When the
chicken is approximatley ten minutes from fully cooked, add potatoes and cover.
Also add salt and pepper to taste. The last three minutes
of cooking add the peas with the juice that is in the can and chicken broth. Simmer for a few minutes.

EASY MAMALEE'S SPAGHETTI AND PEAS RECIPE
1lb of your choice of pasta
2 cans of peas
(you may subsitute any vegtable, or other
item such as shrimp, prawns or whatever you want)
4 chopped garlic
1 chopped yellow onion
1/3 cup of olive oil
salt and pepper
garlic salt
parmesan cheese to taste
Salt the water and cook spaghetti in until tender.
In seperate pot pour olive oil and saute' onion, and
garlic slowly. When tender pour in peas
with juice from the can. You can add a little
more water, or broth according to your liking.
Simmer peas over a low flame until they are done. When
done pour peas mixture into a big bowl. Drain the pasta
and add the pasta to the peas mixture. Sprinkle parmeasan
cheese or other grated cheese of your choice to taste.

MAMALEE'S SAUSAGE AND PEPPERS
3 Tbs olive oil
4-6 mild sweet Italian sausages
1 onion chopped
3 cloves of minced garlic
3 red bell peppers, seed and sliced into strips
2 green bell peppers, seed and sliced into strips
1 14 ounce can diced tomatoes
salt and pepper to taste.
In a large pot heat olive oil. Then add the onions, garlic,
peppers, and salt and pepper. Add the tomatoes after 4 minutes.
In another skillet cook the sausage seperatley. Drain fat
from sausage and cut into approximatley 1 inch chunks. When
the peppers and onions seem tender and just about cooked, add
the sausage. Let simmer at low heat for about 5 minutes.
Uncover and let cool.
