OATMEAL CAKE (recipe from Grandma Foster’s collection) Pour 1 ¼ cup boiling water over 1 cup rolled oats. Let stand 20 minutes. Cream together: 1 cup brown sugar 1 cup white sugar ½ cup oleo 2 eggs 1 teaspoon vanilla Add these 5 ingredients from above to the oatmeal. Mix: 1 ½ cups flour 1 teaspoon soda 1 teaspoon cinnamon ¼ teaspoon nutmeg a little salt Add: ½ cup chopped nuts Mix dry ingredients into oatmeal mixture. Bake @ 325’ for 45 minutes to 1 hour. Take out of oven and put on topping – 1 ½ cups brown sugar 3/8 cup evaporated milk ½ cup nuts ½ cup coconut 6 tablespoons oleo Broil about 3 minutes until bubbly. Grandma Foster used her glass rectangular pan for this cake.
