Grandma Foster’s “Lovelight” chiffon cake ( her chocolate cake) 3 large eggs, separated 2 ¼ cup sugar 2 5/8 cup cake flour 1 1/8 teaspoon soda 1 1/8 teaspoon salt 1 ½ cup Wesson oil 1 ½ cup buttermilk ½ cup cocoa 1 teaspoon cinnamon 1 teaspoon vanilla Heat oven to 350. Grease cake pan. Dust with flour. Beat egg whites until frothy. Gradually beat in ½ cup of the sugar. Continue beating until very stiff and glossy. In another large bowl put remaining sugar, flour, soda, salt, cocoa, cinnamon. Add oil and add half of the buttermilk. Beat 150 strokes by hand. Add remaining buttermilk, egg yolks and vanilla. Beat another 150 strokes. Fold in beaten egg whites. Pour into pan. Bake 1 hour and 10 minutes. Cool and frost. Frosting for “Lovelight” chiffon cake 3 cups icing sugar ½ teaspoon cinnamon ¼ teaspoon salt 1 teaspoon vanilla ¼ cup cocoa ½ cup melted oleo Enough evaporated milk or half and half to make it of spreading consistency.
