Before your Dad became ill and we went on the diet, we liked the following casserole. Calico Beans 6 slices bacon ½ pound ground chuck 1 medium-size onion, chopped (½ cup) ½ cup catsup 1 teaspoon salt ¾ cup firmly packed brown sugar 1 teaspoon dry mustard 2 teaspoons vinegar 1 can (16 ounces) pork and beans 1 can 16 ounces) kidney beans 1 can (16 ounces) butter beans 1. Cook bacon in a large skillet until crisp; remove to paper toweling to drain; crumble. 2. Cook beef in fat remaining in skillet until no pink remains. Add onion; sauté just until tender. 3. Combine beef, onion, catsup, salt, brown sugar, mustard and vinegar in a 3 quart baking dish. Partially drain all the beans; add to baking dish, stirring gently to mix. Sprinkle with bacon. 4. Bake in moderate oven (350) for 40 minutes.
