You can spell it chicken matzoh balls, chicken matzah balls, chicken matza balls, or chicken motza balls, but any way you spell it, the following creative matzo balls recipe, unlike most other matzo ball recipes, gets the chicken into the matzo ball recipe before the matzo ball gets into the chicken broth, which would thus render the dish as matzo ball soup, or chicken soup with matzo balls, whichever way you want to say it! The most important thing is that this chicken matzo balls recipe is low cholesterol, making it a healthy part of any Passover / Pesach Seder meal, and helping to prevent you from getting to see your heart doctor on a regular basis.

Chicken Matzo Balls Recipe

2/3 cup matzo meal
3 tablespoons vegetable oil
1/4 cup water
1/4 teaspoon salt
Few grinds pepper
3 egg whites
1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes
1 lb. (0.45 kilograms) ground chicken breast, fat removed

Instructions for the Chicken Matzo Balls recipe:

  1. Combine matzo meal, oil, water, salt, pepper, egg whites and parsley.
  2. Add ground chicken, mixing well to blend.
  3. Shape into 18 to 30 balls, depending on how you plan to use them.
  4. Drop into 3 quarts boiling water.
  5. Return water to a boil.
  6. Reduce heat and simmer, covered, 15 minutes.

Makes 18 to 30 matzo balls.
