The following matzo ball recipe for the Passover / Pesach festival (also spelled: matzah ball recipe, matzoh ball recipe, matza ball recipe, or motza ball recipe) is, unlike most matzo ball recipes, a low-fat version. A recipe for matzo balls that is low-fat will help keep those pounds (or kilograms) from accumulating on your waistline compared with the regular matzo ball recipe that is used!

Low-Fat Matzo Balls Recipe

1/2 cup matzoh meal
1/2 teaspoon salt
3/4 teaspoon powdered instant vegetable broth
2 tablespoons chopped parsley, optional
Dash of onion powder
3 egg whites
3 tablespoons cold club soda

Instructions for the Low-Fat Matzo Balls recipe:

  1. Stir the dry ingredients together.
  2. Stir egg whites, club soda and parsley slightly with a fork and pour over the dry ingredients.
  3. Mix well and refrigerate at least one hour.
  4. Form into eight balls (1 1/2 inches or 3.81 centimeters in diameter) and drop into a large pot of boiling salted water or broth.
  5. Reduce the heat and simmer, covered, for 30 minutes.
  6. Do not remove the lid during the cooking period.
  7. Remove matzoh balls with a slotted spoon and serve in soup.
