Muffins...better than cupcakes

mmm... cupcakes

oh, um. Muffins!

Dunkin donuts makes delicious corn muffins. But you never know if they sneak a big fat hunk-o-pig in them! Lo and behold, i've took it upon myself to give you the best muffin recipe in the universe. It's vegan so that just makes it so much radder. So get your 12 best friends together and serve them...

 

~Blueberry Muffins~

1 1/2c Fresh or frozen blueberries

2c All-purpose flour

1/3c sugar

1/4 ts Salt

4 ts Baking powder

1/4 ts Ginger

1 ts Ground nutmeg

1 1/2 ts Cinnamon

3 1/2 c Cornflakes (or frosted flakes for that extra touch!)

2 c Soy milk

3 Egg whites (use substitute if you want)

3tb Vegetable oil

Stir together the flour, sugar, salt, baking powder and spices; put them away for later. In large mixing bowl, combine those frosted flakes (or whatever blows your bubble) and the milk. Let that sucka stand 2 minutes or until cereal is softened. Add egg whites and oil; beat it! Add those dry ingredients you tossed to the side, but stir only until they're combined. Gently stir in the blueberries. Keyword: Gently. Portion the batter evenly into 12 lightly greased 21/2 inch muffin pan cups. Bake in 400 degree F oven for like 23 minutes or until they are a nice shade of light golden brown.
