Brewing Beer
Well Kiddies, I am now very spoiled and hate getting commercially produced beers. Over the past 3 years the following beers have been crafted:

Mix between Killians Red and Honey Brown, my first batch, very tasty
Irish Stout
Austrialian Lager
Pumpkin Ale
Hard Cider
Frambois Lambic
Cherries in the Snow
Wheat

Current to do list
Oatmeal Stout
Milk / Sweet Stout

Mistakes Made So Far
Infection with Austrialian lager, cleaniless is godliness when brewing

First Pumpkin Ale batch, ended up with over carbonated results, a few bottles ruptured, and oh what a mess

First Cider Batch, did not have enough non-fermentable sugar with combination of champagne yeast produced off flavor.

Last Irish Stout, not enough carbonation, after some discussion, complete usage of distilled water in brewing is not preferred.

Spoils of the Hobby
Second Pumpklin Ale, nice and malty, rich taste, hint of pumpkin, nice amount of hops

Irish Stouts, good, dark, thick, was able to control hops, so, down played usage to take edge off, some batches have a very nice coffee flavor, others, just damn good.

Wheat, nice light color, refreshing, esters present due to yeast that give a light banana aroma, I prefer what I have brewed over Hoegarden.

I'll see if I can get the recipes used posted, here asap, won't set a date, always running in 5 directions.

If you have a brewing question, please ask, I do not have all the answers but I can tell you what has, and has not worked for me..
