Swiss Garden

SwissBq - Original Print       This is a bouquet of the herbs the Swiss use frequently in their cooking--Bay, Cinnamon, Garlic, Mustard, Nutmeg, Paprika, Parsley and Pepper--and are essential in defining their cuisine. Fondue, Raclette, Air-dried Meat Bündnerfleisch, Soup, Sausage, Porridge Muesli, Swiss Cheese (Emmentaler and Gruyére), Meat Platter Berneplatte, Mushrooms, Cherry Brandy Kirsch, Spiced Honey Biscuits Honigskuchen and Chocolate can be found on their table, from the country inn/cafe Bierstuben to the capital in Berne. Celery, Chives, Cloves, Juniper, Leeks, Marjoram, Onion, Rosemary, Sage, Shallots, Thyme and Vanilla would complete their herb garden.

      Switzerland was originally settled in the North and West by Celts, and in the East by Etruscans. Romans followed in 50 BC, marching over the Alps and colonizing the entire area. Protected by mountain ramparts and peopled by stubborn individualists, Switzerland has since resisted the advances of powerful neighbors for centuries. The complexity of this tiny republic is found in the distracting diversity of its five languages--German, French, Italian, Schwyzerdeutsch and Romansch, a dialect descended from Latin.

      A land of infinite variety in weather, scenery, people, language and food, Switzerland is a checkerboard of 25 sovereign areas called cantons, each with its regional specialties. The thrifty Swiss are accustomed to plain, hearty food. They eat simply of homegrown staples such as milk cheese, cereals, pork, sausage, vegetables (particularly potatoes), fruit and wine. The Swiss have opened their arms wide to receive the great culinary bounty from their neighbors, and have assimilated it to their own taste and needs, producing an international cuisine with refined dimensions that is invariably delicious.
