      "Mixed Spice" is a traditional British Isles blend of spices, also called Pudding Spice, used to flavor steamed puddings and other desserts.   Like all mixtures, the proportions and the ingredients vary according to personal taste.   Mincemeat spice is very similar, as well as American Pumpkin Pie Spice, which sometimes leaves out the allspice.

      Spice mixtures often characterize regional and national cooking, flavoring all types of dishes.   From the 1600s onward, cookbooks began to list spices separately with each individual recipe, rather than a few basic mixtures at the top, but a few popular blends, such as Mixed Spice, are still in use.   For this "Mixed Spice Bouquet" I chose allspice, cinnamon, cloves, coriander, ginger and nutmeg.

      When the Colonists landed in North America they found the Indians growing and using pumpkins.   This large, ungainly fruit was enthusiastically embraced by the new Americans, and ultimately pumpkin pie became a national Thanksgiving tradition.   It was so loved that one early Connecticut colony delayed Thanksgiving because the molasses needed to make this popular pie wasn't readily available.

      Like all mixtures, the proportions and the ingredients of Pumpkin Pie Spice vary according to personal taste.   British Mixed Spice or Pudding Spice and Mincemeat Spice are very similar.  From my research, I have chosen Cinnamon, Ginger, Cloves, Nutmeg, Mace and Fennel.   Other recipes for this blend call for as little as 4 and as many as 6 spices, with Allspice, Star Anise and Orange Peel the other recommended ingredients, so one of these can substitute depending on your taste or what you have on hand.

      "Chili Powder" is a blend of spices created in either the American Southwest or Mexico during the 19th century.   Spice mixtures often characterize regional and national cooking, flavoring all types of dishes.   This powder is used to season chili con carne, eggs, rice, gravies, sauces, soups, fish, meats, vegetables, burritos and tamales.

      Like all mixtures, the proportions and the ingredients vary according to personal taste.   Chili Powder usually contains a sweet pepper (ancho or paprika) and hot pepper (cayenne or jalapeno, plus crushed red chili pepper for extra heat) with cumin, garlic and oregano.   Other additives are allspice, coriander, cloves, black pepper, marjoram, onion and turmeric.   When sugar is added, chili powder becomes a barbecue spice mixture, and, with ketchup, a barbecue sauce.

      Cafe Internationale is a bouquet of herbs that are used by various countries to flavor coffee.   Herbs and spices have been added since the first adventurous brewers crushed the beans and put them into water.

      Coffee originated near the Red Sea, most probably in Ethiopia, and there are records of cultivation since the 6th century.   In the 13th century, the growing, roasting, and grinding of coffee to make a strong-flavored drink was widespread throughout the Arab world; the 17th century saw its spread throughout Europe, with coffeehouses opening in Vienna, Paris, and London.   By the 18th century, coffee production was well established in Java and the Caribbean. Coffee-drinking then spread to the New World; one repercussion of the Boston Tea Party of 1776 was that Americans adopted coffee as their national beverage.

Garam Masala Original Print - Etching and Nature Print

      "Garam" means warm or hot and "garam masala" means warm or hot spices.   This is a North Indian spice mix.   Unlike the other spice mixtures, garam masala is often sprinkled over a finished dish to enhance the flavors, adding a gentle aroma of roasted spices just before serving.   It may also be used in the early stages of cooking to flavor a dish.   A masala may be a simple blend of two or three spices and herbs, or it may contain a dozen or more.   Some masalas, based on pepper and cloves, are quite fiery; others, using mace, cinnamon and cardamom, are aromatic.

      The Western notion of having a single masala or curry powder gives little real idea of Indian cooking, since there are hundreds of masalas -- from different regions, for different foods, and prepared to the taste of different cooks -- imparting a distinctive flavor to each dish.   The most common ground blends are garam masalas, used in northern cooking, and hotter masalas or curry powders from the South.  For my illustration I have chosen bay, cardamom, cinnamon, cloves, coriander, cumin, mace and pepper.

      Sri Lankan Curry Powder is quite different from Indian curry powders.   The basic spices -- coriander, cumin, fennel, and fenugreek -- are each roasted separately and combined into a gloriously rich, dark curry powder, which can then be used for fish, poultry, meat or vegetable curries.   Achieving the right balance of ingredients for a curry powder is highly personal.   The basic recipe, with additions such as cinnamon, cloves, cardamom and curry, can be adapted to suit your taste and the main ingredient for any particular dish.

      The name curry is a corruption of the Tamil word karhi.   Throughout the days of the Raj, the word evolved as a loose description of any Indian food cooked in a sauce.   The early merchants and soldiers who visited India were keen to introduce the flavors to their home cooking.   So demand for a commercial curry powder developed over decades, and such spice mixtures have slowly become more authentic, better in quality and less crude in terms of flavor.   Today there are many curry spice mixtures for both Oriental and Indian cuisines in most supermarkets.
