      In my illustration of the Cabernet Sauvignon grape I have included aromas and flavors you may find in its wine – Black Currant, Cherry, Plum, Blackberry, Chocolate, Spice, Tobacco, Leather, Bell Pepper, Mint, Vanilla, Oak and Cedar.

      Its bouquet and flavors are vast, including dark or black fruit consisting of cherry, currant, blackberry, plum, jam, raisin and blueberry.   The varietal herbal flavors can include bell pepper, asparagus, mint, eucalyptus and green olive.   And then there are the flavors and aromas integrated through the oak itself, including cedar, vanilla, smoke, pepper and spice.

      Lastly, a majority of the higher tier Cabernets display complex flavors and aromas that are greatly influenced by the climate and soil conditions of the region the Cabernet is produced, its terroir (pronounced tair-WA), and the winemaking techniques utilized.   Included in these flavors are chocolate, licorice, coffee, tobacco, earth, mushrooms, herbs and even tar.   Remember, these are subtle hints and flavors; the fruit should dominate in quality Cabs.

Chardonnay - Original Print

      In my Monotype of the Chardonnay grape I have included aromas and flavors you may find in its wine – Apple, Pear, Lemon, Peach, Melon, Pineapple, Almonds, Hazelnuts, Toast, Vanilla, Oak Butter, Cream and Mineral.   Notice on my bunch, the small round yellow berries that may turn amber when ripe. Chardonnay has small to medium cylindrical, often winged, clusters.   The French clones typically have smaller clusters, while in California they are often larger.

      The bouquet and natural fruit flavors found in Chardonnay are apple, pear, quince, peach, apricot, lemon, lime, orange, grapefruit, melon, tangerine, pineapple, banana, mango, guava and kiwi.   Processing bouquets and flavors introduced by the winemaker with malolactic fermentation add butter, cream, almonds and hazelnut.   Light Oak adds vanilla, sweet wood and coconut.   Heavy Oak adds oak, smoke, spice, toast and yeast.   Climate and soil conditions of the region, its terroir (pronounced tair-WA) add earth, flint, mineral and mint.   The two biggest influences on the grape are climate and oak.

      Chardonnays that are made in hotter countries such as Australia and South Africa will taste richer and fruitier than those made in cooler regions such as Burgundy and the north of Italy, simply because the grapes get riper.   The kind of citrus and melon flavors you find in Chardonnay from most parts of Europe transform themselves into ripe peach or tropical fruit in hotter regions.

      In my Monotype of the Gewürztraminer grape I have included aromas and flavors you may find in this wine -- Lychee, Peach, Apricot, Lemon, Orange, Citrus Peel, Honey, Roses, Honeysuckle, Spice, Pepper, Ginger, Cinnamon and Cloves.   Notice the small round grapes; on my bunch the clusters are small, but the unique tan-pink to reddish color at maturity is easily recognizable.   It sets a modest crop and ripens best in cool climates.

      The bouquet and natural fruit flavors that can be found in Gewürztraminer are lychee, peach, apricot, mango, papaya, pineapple, citrus peel, lemon, orange, grapefruit, quince, and candied apple fruit.   It is highly aromatic with hints of perfumed flowers including rose petals, gardenia and honeysuckle.   Spice aromas are ginger, clove, cinnamon, nutmeg, allspice and pepper.

      Flavors introduced by the winemaker are petroleum and, in the late harvest wines, honey and sweet cabbage. Once you've tasted Gewürztraminer you can pick it out blindfolded. It is one of the most distinctive aromatic grapes, lush with ripe fruit flavors.

MerlotF - Original Print

      In my Monotype of the Merlot grape, I have included aromas and flavors you may find in this wine -– Cherry, Plum, Raspberry, Blackberry, Cassis, Chocolate, Tobacco, Spice, Herbal, Bell Pepper, Vanilla, Oak, and Violets.   Notice the deep blue-black to violet grapes that are medium to large on the long cylindrical clusters with large shoulders.

      The bouquet and natural fruit flavors found in Merlot can range from red berries – cherry, strawberry or raspberry to dark berries and plum – black currant and black cherry.   Floral flavors include violets and roses.   Spice flavors include caramel, clove, bay leaf and green peppercorns.   Herbal Flavors include bell pepper, pimento, mint and green olive.   The processing bouquets and flavors introduced by the wine maker include:   oak aging which produce vanilla, coconut and sweet wood flavors in lightly oaked wines and smoke, tar, oak and toast in heavily aged wines.

      Bottle Aging can add flavors of truffle, mushroom, earth, game, chocolate, tobacco, coffee, leather, cedar and cigar box.   Remember, these are subtle hints and flavors; the fruit should dominate in quality Merlots.

      On my Monotype of the Pinot Gris (or Pinot Grigio in its Italian translation) grape I have included the aromas and flavors you may find in this wine -- Pear, Apple, Grapefruit, Peach, Melon, Lemon, Lime, Honey, Spice, Smoke, Almonds, Cream, Floral and Mineral.   Notice the skin of the small round grapes on my bunch: it may vary anywhere from a coppery gray to a pinkish brown to a dappled blue-gray, depending on where it is grown and the climatic conditions.

      In the vineyard it is not uncommon to find clusters that contain one to several berries that are darkly colored and others that are light.   Also, individual berries may have skins that display the entire range of colors.   All Pinot grapes grow in small clusters that resemble pinecones; hence the name Pinot.   They are genetically identical to the Pinot Noir grape, sharing leaf shapes, vine structure, and bunch and fruit size.

      The Bouquet and natural fruit flavors found in Pinot Gris are Lemon, Lime, Orange, Grapefruit, Melon, Apple, Pear, Quince, Apricot, Peach and Candied Fruits.   It can have both a Floral Note and a Mineral Zing.   Flavors introduced by the winemaker are: Oak, adding Vanilla, Sweet Wood, Almond and Smoke; Malolactic Fermentation, hints of butter and cream; and Bottle Aging, which adds Honey and Caramel.   An abundance of citrus offers additional complex flavors of tree fruits and even hints of almond.   This has mostly to do with the soil and climate in which they are grown, the terroir (pronounced tair-WA).

      Pinot Gris is usually delicately fragrant and mildly floral, with light lemon-citrus flavors.   The aroma here is clean and refreshing, with faint lemon and apple character.   The prominent acidity gives a mouthwatering quality, quite lip-smacking, while the hints of mineral add dimension to the refreshing long finish.

Pinot Noir - Original Print

      In my Monotype of the Pinot Noir grape I have included aromas and flavors you may find in its wine--Raspberry, Cherry, Plum, Strawberry, Chocolate, Earth, Spice, Smoke, Game, Herbal, Violets, Vanilla and Oak.   Notice the tiny grapes on my bunch and how they are very tight around the stem.   Pinot Noir is named after the noble Pinot family for the pine cone shape of its grape cluster.

      The bouquet and natural fruit flavors found in Pinot Noir are tangy red berries to ripe summer berries--cranberry, sour cherry, red currants, bing cherries, strawberry, raspberry, ripe tomato, plum and black cherry.   Floral notes are violets and rose petals.   Spice flavors are peppermint, rosemary, cinnamon, cloves and caraway.   Herbal flavors are rhubarb, beet, oregano, green tomato, green tea and black olive.   Processing bouquets and flavors added by the wine maker are with light oak--vanilla, coconut and sweet wood.   (You may also note a whiff of sweetness from the oak.)   With heavy oak--smoke, spice, toast and tar.   Bottle Aging adds cedar, chocolate and cigar box.

      Its subtle terroir (pronounced tair WAH) character adds mushroom, earth, barnyard, truffle, leather, game, meat and wet forest floor to the descriptors.   Pinot Noir is considered a most sensual, artistic, seductive red wine with its exotic, invitingly perfumed, spicy, earthy, vividly fruity flavors.   Great Pinot Noir creates a lasting impression on the palate and in the memory.

      In my Monotype of the Riesling grape I have included aromas and flavors you may find in its wine -- Peach, Apricot, Nectarine, Apple, Pear, Lemon, Lime, Honey, Floral, Honeysuckle, Spice, Smoke, Mineral and Petrol.   Notice the small round white green grapes; on my bunch, the clusters are small and can be winged.

      Germany is the headquarters for great Riesling; it achieves a bewitching power and purity of fruit and an uncanny range of flavor, all in a sleek package.   Seemingly delicate, almost ethereal in the mouth, it balances fruitiness and sweetness, making the wine refreshing, complex and great for food.   Its flavors are hugely appealing, from crisp green apple (the Mosel) to rich lime and tropical fruit (Australia) to the intensely sweet but well balanced dessert wines of Germany, Austria, Canada and New Zealand.   Riesling also ages wonderfully, acquiring intriguing petroly, kerosene flavors.

      The varietal aromas and flavors include Stone Fruits -- apples, pears, peaches, nectarines and apricots; Citrus Fruits -- lime, orange, lemon and tangerine and Tropical Fruit -- pineapple.   The floral aromas include rose petal, honeysuckle, woodruff, and violet.   The processing and aging bouquets and flavors are toast, smoke, spice, petroleum, diesel and mineral, including flint, steel and gunmetal.   Sweet wines smell of dried apricot, honey, petrol and raisin.   This wine is aromatic, delicate, racy and expressive.

      In my Monotype of the Sangiovese grape I have included aromas and flavors you may find in its wine – Strawberry, Cherry, Plum, Raspberry, Tobacco, Chocolate, Spice, Black Olives, Coffee, Vanilla, Oak and Floral.   Notice the medium to large blue-black and violet grapes on my bunch.   Sangiovese is a late ripener, so you may see various degrees of ripeness on the bunch at harvest time.

      The bouquet and natural fruit flavors found in Sangiovese are Strawberry, Raspberry, Cherry, Plum, Blueberry, Blackberry and Raisin.   Floral notes can include Violets, Wildflowers or Jasmine.   Spice flavors are Cinnamon, Clove, Licorice and Thyme.   With flavors introduced by the wine makers with light oak, you may find Vanilla and Sweet Wood, while heavy oak can introduce Oak, Smoke, Toast and Tar.   Bottle aging adds Cedar, Coffee, Game, Musk and Earthiness.

      In my Monotype of the Sauvignon grape I have included aromas and flavors you may find in its wine -- Gooseberries, Lemon, Grapefruit, Mellon, Grass, Bell Pepper, Asparagus, Herbal, Mineral, Smoke, Vanilla, Oak and Cream.   Notice the small round frosted yellow green grapes on my bunch; the clusters are medium and can be winged.   Vines grow vigorously in many soil types in both cool and warm regions.

      Most Sauvignon Blanc wines are crisp, dry and zesty with lovely fruit, but the signature is a grassy, herbaceous style.   The bouquet and natural fruit flavors found in Sauvignon Blanc are Gooseberry, Grapefruit, Lemon, Lime, Citrus, Honeydew, Cantaloupe, Peach and Nectarine.   Herbal notes include Grass, Bell Pepper, Asparagus, Green Olive and Lemon Grass.

      Flavors introduced by the wine maker with oak aging are Vanilla, Sweet Wood, Butter, Cream, Oak, Smoke and Toast.   Bottle aging can introduce Mineral and Flint.   Some tasters also detect a subtle earthiness which may come from the climate and soil conditions of the region, its terroir (pronounced tair-WA). Sweet wines may exhibit hints of honey, raisin and figs.

Semillon

Semillon - Original Print

      In my Monotype of the Sémillon grape, I have included aromas and flavors you may find in its wine –- Apricot, Peach, Pineapple, Apple, Pear, Lemon, Fig, Honey, Toast, Vanilla, Oak, Nutty, Floral and Beeswax.   Notice the medium to large round yellow to golden grapes on my bunch; the clusters are medium and can be winged.   Some browning may occur on fully exposed fruit.

      The bouquet and natural fruit flavors found in Sémillon are Apricot, Peach, Pineapple, Apple, Pear, Citrus, Lemon, Melon, Banana, Date and Fig.   Floral notes can also be found.   Herbal Flavors include Grass, Weeds, Lanolin, Bell Pepper and Asparagus.   Spice flavors include Cinnamon and Saffron.

      Flavors introduced by the winemaker with oak aging are Vanilla, Sweet Wood, Oak, Nutty, Smoke, and Toast.   Malolactic Fermentation adds Butter, Cream and Custard flavors.   Botrytis (Noble Rot) adds Apricot, Quince, Peach, Honey, Pineapple, Vanilla and Candy flavors.   Bottle aging adds Beeswax, Butterscotch, Candied Fruits and Chocolates.   Remember, these are subtle hints and flavors; the fruit should dominate in quality Sémillon.

      In my Monotype of the Syrah grape I have included aromas and flavors you may find in its wine – Blackberry, Black Currant, Raspberry, Cherry, Plum, Chocolate, Spice, Pepper, Licorice, Smoke, Leather, Vanilla and Oak.   Notice the small to medium blue-black grapes on my bunch.   Since Syrah is an midseason ripener you may see grapes starting to shrivel by harvest.

      The bouquet and natural fruit flavors found in Syrah (Shiraz in Australia, but it's the same grape) are Blackberry, Black Currant, Raspberry, Boysenberry, Cherry, Plum, Prune, Raisin and Dried Fig.   Floral notes include Rose Petals, Violets and Grass.   Herb and Spice flavors are Black Pepper, Sweet Spice (Cinnamon, Cloves & Allspice), Licorice, Anise, Thyme, Cumin and Mint.

      Flavors introduced by the winemakers with light oak are Oak, Coconut, Vanilla and Sweet Wood.   Heavy oak can introduce Oak, Roasted Nuts, Smoke, Toast and Tar. Bottle aging adds Leather, Cedar, Chocolate, Coffee, Spice, Smoke, Earth, Game and Tobacco.   A majority of the higher tier Syrah wines display complex flavors and aromas that are greatly influenced by the climate and soil conditions of the regions that the grape was produced, its terroir (pronounced tair-WA).   Included in these flavors are Musk, Truffle and Earth.   Remember, these are subtle hints and flavors; the fruit should dominate in quality Syrah/Shiraz.

Zinfandel

tZinfandel - Original Print


      In my Monotype of the Zinfandel grape I have included aromas and flavors you may find in its wine – Black Currant, Cherry, Plum, Blackberry, Blueberry, Pepper, Spice, Chocolate, Herbal, Vanilla, Oak, Cedar and Earth.   Notice the deep blue-black medium to large grapes and that some of them have begun to raisin on the long, often winged, conical clusters.

      The bouquet and natural fruit flavors found in Zinfandel are Strawberry (White Zin), Raspberry, Blueberry, Blackberry, Black Cherry and Plum.   Herbal flavors and bouquets include Briar, Licorice, Nettle, Mint, Anise, and Eucalyptus.   Spice flavors/aromas include Cinnamon, Cloves and Black Pepper.   Flavors introduced by the wine maker through Carbonic Maceration are tutti-frutti, candy, bubble gum (White Zin).   Spending time in Oak barrels introduces vanilla, toast, spice and tar flavor and aromas, while Bottle Aging adds musk, mushroom, earth, cedar, and cigar box aromas and flavors.

      Lastly, a majority of the higher tier Zinfandels display complex flavors and aromas that are mostly influenced by the region that the grape is produced, it's terroir (pronounced tair-WA).   Included in these flavors are chocolate, licorice, coffee, tobacco, earth, mushrooms, herbs and even tar.   Remember, these are subtle hints and flavors; the fruit should dominate in quality Zins.
