Tomato Couscous
1 cup couscous, prepared according to package directions and cooled
1/4 cup olive oil
4 ripe tomatoes, coarsely chopped
1/2 cup chopped fresh mint
2 tablespoons vinegar
Salt and pepper to taste
In a large bowl, toss couscous with oil. Combine with remaining ingredients. Serve cold or at room temperature
