Couscous Pilaf


1 tbs. butter
1 tbs. oil
1 onion, chopped
1 clove garlic, pressed
1/2 cup chopped mushrooms
1/2 cup peas
1/2 of a red pepper, chopped
2 tsp. tamari
1 tsp. basil
1/2 tsp. marjoram
1/2 tsp. curry powder
1 1/2 cups water or stock
1 cup couscous

Saute onions and garlic in butter and oil until nearly soft. Add vegetables and saute a couple of minutes, then add herbs curry powder, tamari and water or stock. Bring to a boil, add couscous, stir, return to a boil. Cover, lower heat and simmer for 2 minutes. Remove from heat and let sit for 5 minutes. Stir with a fork to fluff up.
