Spinach Frittata

1. Heat half the butter or oil in an oven-safe skillet on medium heat.

2. Slice pepper into strips; brown in skillet.

3. In large mixing bowl, beat the eggs. Add spinach, tomatoes, oregano, salt, pepper, and bell pepper from skillet.

4. Melt remaining butter on medium heat and use to grease the skillet.

5. Pour egg mixture into hot skillet. Turn heat to low.

6. Cover and cook on low heat until top is about set; about 15 minutes, depending.

7. Sprinkle cheese on top and run under broiler until top is a golden-brown color.

8. Allow to cool for 5 minutes. Cut into triangles and serve warm.
