Before I became a famous cyber personality and a computer teacher, I ran several businesses; one was called Cauldron Cooking Company after the cauldron in the I Ching. The second business was called Custom Cuisine, specializing in ethnic whole foods (Greek and Middle Eastern in particular). No pre-packaged frozen entrees for my clients. Everything was from scratch and as fresh and clean as possible. If I ever have another catering service it will be called Rolls and Punches!!!

The main product at the Cauldron was seitan, or wheat glutten. Below you will find the basic recipe as well as for a roast, jerky, and burger products. I assisted the Tibetan refugees in the Northwest (Jygme Topgyal)by teaching them how to make it so they could sell it wholesale to Asian restaurants. I also planned and promoted making seitan in Russia, as it is basically a wheat producing country. By grinding the wheat as it is needed, the life forces remain for three days after crushing, but also makes it possible to store large quantities of wheat berries which will not spoil.

The seitan was sold by the pound wholesale to natural food stores from Seattle to San Francisco and many Asian restaurants bought the seitan in bulk. The package was simple in a plastic bag in a water brine inside a cardboard take home container. The top was sealed with a full size sticker of the product (see above). Inside was included Tibetan sayings, sort of like fortunes. A Sikh called one day screaming at me because he had got, "one rat dropping will ruin the whole pot of rice". He was furious I would put that in his package. I laughed. No sense of humor,he. One of the joys of having your own business is to blow off your obnoxious customers with impunity!!!! :-)

BASIC SEITAN

SEITAN ROAST WITH BASIC YEAST GRAVY

BURGER/general - This is the finished basic seitan that has come out too soft and not acceptable for cold cuts and the like, or regular basic seitan that has been ground in a food processor. It may be used in any way that "regular hamburger meat" is used, for instance, "meatloaf" using your favorite recipe. A good friend of mine made a meatloaf for dinner and her family did not "twig" that the whamburger it was made with was not "real" meat!!!
