Putong Puti


Ingredients:

2 cups rice, soaked overnight and ground with 2-1/2 cups water
1-1/2 cup white sugar
3 tsp baking powder
1/2 tsp salt

Procedure:

The ground rice should have the consistency of thick batter. Add the sugar, salt and 1 tsp of baking powder for every cup of mixture. Fill molds 2/3 full with mixture. Arrange in steamer and steam for half an hour or until done. It is done when toothpick inserted into it comes out dry or clean. Remove from molds and serve with grated coconut or margarine on top.

Ingredients:

4 cups all purpose flour
3 eggs
2-1/2 cups white sugar
3-1/2 cups water
3 tbsp baking powder

Procedure:

Mix together flour, baking powder and sugar. Beat eggs in a bowl, add water. Then add flour mixture. Strain for fine texture. Pour into Puto molds (full). If you will use a baking pan, grease it with butter or line with foil or banana leaves. Steam for 15 to 20 minutes. For special Puto, top with white cheese or salted eggs before steaming.
