SPINACH SALAD (Fresh)

Two bunches of fresh spinach

6 slices of bacon

2 hard boiled eggs

Red Onion-half cup sliced thin

Pepper

Red Wine Vinegar

Sugar

In the morning rinse spinach and remove stems for better salad. Tear in

bite size pieces and drain on paper towel. Place in metal bowl,

sprinkle with pepper to taste, toss in red onion slices. Cover till

ready to make dressing.

Dressing:

Boil 2 eggs- set aside

Cook bacon, slice in small pieces and fry till done. Add 3 T. sugar to

hot bacon in skillet, stir, add 1/2 C. of red wine vinegar. Stir till

bubbly, remove from heat. Slice eggs and put in salad. Spoon warm

bacon, vinegar dressing over and toss.
