Barbeque Cookouts Recipies & Photos

Here are recipies of my own and some that I have obtained through other sources. I have had requests for a mustard based barbeque sauce and I have now included one. I think bbq'ing is a great pastime and its real rewarding when your family and friends tell you how good your cooking is.









Here's a quick Barbeque Sauce recipe I found.

Ingredients:
1/4 Cup Chopped Green Peppers
3/4 Cup Celery
1/4 Cup Chopped Onions
2 TB Vinegar
1 Can Tomatoes
3 TB Brown Sugar
1 ts Worcestershire Sauce
1/4 ts Salt


Preparation: Simmer on low heat for 1 hour or more, let thicken and when cool bottle and keep in refrigerator. Serve with fried fish or chicken.

Beer Barbecue Sauce

1 cup Prepared barbecue sauce
1 cup Ketchup
2/3 cup Beer
1/4 cup Honey or Molasses
2 tablespoons Lemon juice
2 tablespoons Red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon Hot pepper sauce
1/2 teaspoon Pepper
2 Garlic cloves -- minced
2 Onions -- finely chopped

In large bowl, combine barbecue sauce, ketchup, beer, honey, lemon juice, vinegar, mustard, Worcestershire sauce, hot pepper sauce, pepper, garlic and onions. Place food in marinade and let stand at room tepmerature for up to 2 hours or in refrigerator overnight. When ready to cook, remove food and place marinade in saucepan and cook for 10 minutes or until thickened. Use as sauce for basting or serving with cooked food. - - - - - - - - - - - - - - - - - -



Mustard Barbecue Sauce

Preparation time: 30 minutes
Ingredients:
1/4 cup brandy
1 cup Dijon mustard
1/2 cup white balsamic vinegar
1/4 cup honey
2 Tbsp lemon juice
2 Tbsp butter
1 Tbsp red pepper flakes
1 Tbsp green peppercorns, crushed
1 Tbsp pink peppercorns, crushed
Reduce brandy by half over medium heat. Then add the rest of ingredients
and cook over medium-low heat for 30 minutes.





BigJays Secret Stuff!

Here's one of my secret barbeque sauce recipes that I make that is very easy and will turn out some awesome chicken or ribs. Find Rumboggles BBQ sauce (preferably) the ketchup based kind, and add black molassas, sugar, vinegar, and crystal hot sauce. Its up to you to judge how much of what you want to add. You can be generous with everything but be careful with the crystal hot sauce as it may be to hot for some folks ! You may substitute Texas Pete as well. Also, you can add diced onions, and or garlic to the mix for added kick. I guarantee your friends will love your cookout with this recipe ! Try it ! If the fire gets too hot pour beer over the food onto the charcoal if you haven't added the sauce yet. Bon Apetite!



This is a BBQ Beef Rub recipe by Jim Goode

Mix well and rub into meat, refridgerate overnight. You may save the leftover for another time.

2 1/2 tablespoons dark brown sugar
2 tablespoons paprika
2 tablespoons mustard powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 teaspoon ground bay leaves
3/4 teaspoon ground coriander
3/4 teaspoon ground savory
3/4 teaspoon dried thyme
3/4 teaspoon ground black pepper
3/4 teaspoon ground white pepper
1/8 teaspoon ground cumin
salt to taste


My new secret!!! This Sauce is the BOSS!






Winter is here !... You do not need an awesome smoker such as this on to have fun cooking out. I use a 55 gallon smoker with Kingsford charcoal. It is by far the best. I have tried everything and you get what you pay for. Also if you are going for great smoke flavor use Jack Daniels hickory chips. Do NOT use presoaked charcoal. It will work most of the time but it can also ruin all your food with a kerosene flavor. I also use a Brinkman temperature gauge to make sure the heat is just right. If you are smoking keep the temperature between 230 - 250 degrees if possible.
