Beef Tips In The Crock Pot

4 servings

1 1/2 pounds stew meat
1 envelope onion soup mix
1 10 3/4 ounce can cond. cream of mushroom soup, Golden variety
1/2 cup red wine
1 4 oz. can mushroom, drained

Mix all together in Crock Pot and cook "all day" on low. Serve over rice or noodles

2 cups pasta, 4 varieties of shapes, such as wagon wheel, penne, shells, and spiral
1 pound lean ground beef
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1 green pepper, chopped
1 onion, (medium), chopped
1 4 oz. can mushroom, drained
1 package pepperoni
2 16 oz. jars spaghetti sauce
2 cups mozzarella cheese, shredded
1 cup cheddar cheese, shredded

Cook macaroni and drain. Brown hamburger and drain. In large skillet place the hamburger, onion, green pepper, mushrooms, spaghetti sauce and seasonings. Let simmer 10 to 15 minutes. In crock pot, layer ½ the macaroni, ½ the sauce mixture, ½ the pepperoni, and ½ the cheese. Continue layering until all ingredients are used, ending with cheese on the top. Cook on low for 3 to 4 hours

Country Wine Chicken

4 skinless and boneless chicken breast
1 10 3/4 ounce can cond. cream of mushroom soup, undiluted
1/4 cup dry white wine
1 carrot, (small), peeled, julienne and cut into 1/2-inch pieces
1/4 cup mushroom, sliced
1 teaspoon dried parsley
1/8 teaspoon pepper

Season chicken with salt and pepper. Place in crock pot.
Combine soup, wine, carrots, mushrooms, parsley, and pepper. Pour over chicken. Cover and cook on low.

Creamy Italian Chicken

4 boneless skinless chicken breast halves
1 envelope dry Italian salad dressing mix
1/4 cup water
8 ounces cream cheese, softened
1 10 3/4 ounce can cond. cream of chicken soup, undiluted
1 4 oz. can mushroom stems and pieces, drained
Hot cooked rice or pasta

Place the chicken breast halves in the crock pot. Combine the Italian dressing mix and water until smooth; pour over top of chicken. Cover; cook on low for 3 hours. Crock pot Baked Chicken Breasts

2 tablespoons margarine
1 10 3/4 ounce can cond. cream of chicken soup
1/2 cup dry sherry
1 teaspoon tarragon, or rosemary

LizP's Crock Pot Chicken and Cornbread Dressing

8 servings

1 Large pan Cornbread, (9x13) Made with milk and 6 eggs
2 biscuits, or slices of bread
1 10 3/4 ounce can cond. cream of celery soup
1 10 3/4 ounce can cond. cream of mushroom soup
1 10 3/4 ounce can cond. cream of chicken soup
1 onion, diced
1/2 cup margarine
4 chicken breasts, or turkey breast, cooked, and torn into small pieces
2 cups chicken broth, enough to moisten
salt and pepper, to taste
sage, to taste

Crumble cooked cornbread and light bread in large pan. saute onions in margarine and add to cornbread mixture. Add soups, meat, broth, salt, pepper, and sage. Put in large crock pot and cook on high for 3 to 4 hours, stirring every hour.
Dips version:
I cook 3 or 4 chicken breast and tear into small pieces. Throw it in the crock pot with all the above ingredients except bread. Let cook for 3 to 4 hours, toss in crumbled cornbread approximately 30 minutes before serving. I leave off the biscuits/bread.

LizP's Pizza Meatballs

6 servings

1 pound ground beef
1/4 cup bread crumbs
1 tablespoon fresh parsley, chopped
1 tablespoon oregano
1 clove garlic, minced
1 dash salt
1 dash pepper
1 onion, medium, chopped
2 teaspoons Italian seasoning
8 ounces mozzarella cheese, cubed
8 ounces pizza sauce
16 ounces spaghetti sauce
1 package large shell macaroni

Mix ground beef, bread crumbs, parsley, oregano, garlic, salt and pepper, onion and Italian seasoning in large bowl. Mix well with hands.

Take a cube of cheese and place in the center of a small amount of the ground beef mixture. Form a meatball around the cheese cube.

Place meatballs in a pan and bake at 350 degrees F. for about 30 minutes, or until browned.

Place in a crock pot and pour the pizza and spaghetti sauce over top. Keep warm on low. Enjoy.

LizP's Sante Fe Stew

1 pound ground beef
1 large onion
3 14 oz. cans pinto beans
1 14 oz. can Rotel
1 15 oz. can diced tomato
1 15 oz. can tomato sauce
1 package ranch dressing mix, Hidden Valley, not their dip mix
1 package dry taco seasoning mix
1 15 oz. can corn, drained


Brown ground beef and onions in skillet. Drain.
Combine all ingredients in crock-pot, cover, and cook on low for 4 hours. I have let it cook all day and it was fine.
You can also make this on the stove top; just simmer it slowly for 45 minutes or so. I like it in the crock-pot better, but it is still delicious this way.

LizP's Slow Cooker Meat Sauce

8 servings

2 pounds ground beef
2 medium chopped onions
2 28 oz. cans diced tomatoes
2 6 1/2 oz. can tomato paste
2 8 oz. cans tomato sauce
1 bay leaf
8 cloves garlic, minced
4 teaspoons dried oregano
1 1/2 teaspoons salt
4 teaspoons dried basil
2 tablespoons brown sugar
1 1/2 teaspoons dried thyme

Brown meat and onion. Drain well. Transfer to slow cooker. Add remaining ingredients.
Cover. Cook on low 7 hours. If the sauce seems too runny, remove lid during last hour of cooking. (that has never happened to me.)
This recipe does not call for black pepper. I always add some, but I just kind of sprinkle it in. I don't measure it. So...use your best judgement.

To Die For Pot Roast

6 pounds roast beef
1 envelope ranch dressing mix
1 envelope brown gravy mix
1 envelope Italian salad dressing, mix
1/2 cup hot water

Place trimmed roast in crock pot. Combine dry ingredients and rub over all surfaces of roast. Pour water into bottom of crock pot. Cover & cook on low for 6-7 hours. (Mine took 9 hrs on low-slightly over 4 pound roast). Dilute pot juices to taste and then thicken with flour and water mixture.

Yankee Pot Roast and Vegetables - A Family Favorite

2 1/2 pounds beef chuck pot roast
1 pound baking potato, unpeeled and cut into quarters
2 carrots, cut into 3/4" slices
1 medium onion, sliced
2 bay leaves
1 teaspoon dried rosemary leaves
1/2 teaspoon dried thyme leaves
1/2 cup beef broth

Trim off excess fat from roast. Cut into serving pieces, sprinkle with salt and pepper and place in crock pot. Add the vegetables, bay leaves, rosemary and thyme to slow cooker. Add the broth. Cover and cook on low 8 1/2-9 hours or until beef is tender. Remove beef to serving platter. Arrange vegetables around it. Remember to discard the two bay leaves
