"No Bake" Cookies

36 servings

2 cups sugar
1 teaspoon vanilla
1/4 cup cocoa
1 pinch salt
1/2 cup milk
1/2 cup peanut butter, chunky
1/4 pound butter
3 cups quick cooking rolled oats

Mix in pan: Sugar, cocoa, milk, and butter. Put on medium heat and cook until mixture starts to boil. Remove from heat. Cook for 1 minute. Add vanilla, salt, peanut butter, and oatmeal. Stir well. Drop by teaspoonful onto wax paper; let harden.

Almond Joy Cookies

45 servings

1 14 oz. can sweetened condensed milk, Eagle brand
2 ounces unsweetened chocolate
1/4 teaspoon salt
1 teaspoon vanilla
3 cups shredded coconut
45 whole almonds

Preheat oven to 350°.
In the top of a double boiler, combine the milk, chocolate, and salt. Cook over rapidly boiling water, stirring often, for 5-7 minutes, or until mixture thickens.
Remove from the heat and stir in the vanilla and coconut. Form cookies by dropping teaspoons of the mixture on a well-greased cookie sheet, 1-inch apart.
Top each with a whole almond.
Bake on the middle shelf of the oven for 10-12 minutes, watching cookies carefully after 8 minutes, as the bottoms can get too brown. Immediately remove cookies from pan with a metal spatula and cool on wax paper covered rack.

Almond Joy Fudge Brownies

1 package Duncan Hines chewy fudge brownie mix, 19.8 ounce
3 tablespoons vegetable oil
1 cup sweetened condensed milk, Eagle Brand
14 ounces Miniature Almond Joy Bars, coarsely chopped
1/2 cup toasted almonds

Prepare mix according to brownie package directions, except only use 3 Tablespoons of vegetable oil. Pour into greased 9 x 13-inch pan. Pour and spread 1 cup of condensed milk. Sprinkle with chopped candy bars and toasted almonds. Bake at 350° for 35-38 minutes. Let cool completely before cutting into 2-dozen bars

Aunt June's Fruit Drop Cookies

1/2 pound butter
3 eggs, well beaten
1 cup sugar
1 package dates, cut into small bits
1/2 pound candied pineapple, cut into small bits
1/2 pound candied cherries, cut into small bits
1 cup white raisins, cut into small bits
1 cup nuts, cut into small bits
3 cups flour
1 teaspoon baking soda
1 teaspoon vanilla

Cream together sugar and butter. Add in eggs and vanilla. Beat until fluffy. Sift together dry ingredients, and then add to sugar mixture. Stir in fruits and nuts. Make into small balls. Bake on greased cookie sheet in slow oven 250° about 20 minutes.

Aunt June's Skillet Cookies

Melt:
1 stick butter, in an iron skillet
Add:
3/4 cup sugar
2 eggs, well beaten
1/2 pound dates
Cook over low heat, stirring constantly and mashing dates.
Let cool 10-15 minutes and add:
3 cups Rice Krispies cereal
1 cup chopped pecans
1 teaspoon vanilla
Roll into balls and roll in:
1 6 oz. package shredded coconut

Break Your Diet Bars

1 package cake mix, butter recipe yellow
1/3 cup oil
2 eggs
1 12 oz. package chocolate chip
1 cup white chocolate, chips
3 3/4 ounces chocolate candies, Chocolate Covered Toffee Bars, cut into pieces
1/2 cup butter
32 caramel candies, unwrapped
1 14 oz. can sweetened condensed milk

Preheat oven to 350°. Grease 9x13-inch pan and set aside. In a large bowl, combine cake mix, oil and eggs and blend well. stir in chocolate chips, white chocolate chips, and candy bar pieces. (Mixture will be very thick) Press half of mixture into bottom of pan. Bake for 10 minutes.

Meanwhile, in medium saucepan, combine butter, caramels, and sweetened condensed milk. Cook over medium-low heat until caramels are melted and mixture is smooth, stirring occasionally. Slowly pour caramel mixture evenly over partially baked crust. Drop remaining cake mix over caramels by teaspoons and press softly into caramel mixture.

Bake and additional 25-35 minutes or until top is set and edges are a deep golden brown. Cool 20 minutes. Run knife around edges to loosen bars. Cool 40 minutes and then refrigerate for 1 hour. Cut into bars. Store in Fridge

1/3 cup shortening
1 cup sugar
2 eggs
3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup nuts

In double boiler; melt chocolate and shortening together. Beat in sugar and eggs. Sift together dry ingredient and add to chocolate mixture. Mix in nuts. Spread in well greased 8" square pan. Bake at 350° for 30-35 minutes. Bake until top has a dull crust. A slight imprint will be left when top is touched lightly with finger. Cool slightly then cut into 2" squares.

2 teaspoons baking powder
2 teaspoons baking soda

Prepare these cookies in a very large mixing bowl or a roaster pan. Cream margarine and shortening with sugar and eggs. Stir in flour, baking powder, soda, and salt. Add remaining ingredients and blend well. Use an ice cream scoop to dip mixture. Place cookies on greased cookie sheet, flatten slightly allowing space for cookies to spread.
Cookies will be 3 to 4 inches in size. Bake in 350° oven for 15 to 18 minutes. Makes 48 large cookies.

Buttermilk Brownies

1 cup water
1/3 cup cocoa
2 cups all-purpose flour, sifted
1 teaspoon baking soda
1/2 cup buttermilk
2 eggs, slightly beaten
1 1/2 teaspoons vanilla
Frosting:
1/4 cup butter
3 tablespoons buttermilk
2 1/4 cups powdered sugar, sifted
1/2 cup chopped pecans
1/2 teaspoon vanilla

In saucepan, combine butter, cocoa, and 1 cup water. Stirring constantly, bring to a boil. Remove from heat. In large bowl, sift together flour, sugar, soda, and salt. Stir in eggs, buttermilk, and vanilla; add cocoa mixture. Mix until well blended. Pour into greased 15 1/2 x 10 1/2 x 1-inch baking pan. Bake at 375° for 20 minutes. Immediately pour frosting over brownies; spread evenly. Cool; cut into bars.
Frosting: In saucepan, mix 1/4 cup butter, 3 T. buttermilk, cook and stir often until boiling; remove from heat. Beat in 2 1/4 cup sifted powdered sugar, pecans, and vanilla. Pour over brownies.

Choc-Oat-Chip Cookies

1 cup shortening
1 1/4 cups brown sugar, firmly packed
1/2 cup sugar
2 large eggs
2 tablespoons milk
2 teaspoons vanilla
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt, (optional)
2 1/2 cups old-fashioned oatmeal, uncooked
2 cups chocolate chips, semi-sweet
1 cup nuts, chopped, optional

Pre-heat oven to 375o

1) Beat butter, and sugars until creamy... then add the eggs, milk and vanilla, and beat well. Add the flour, baking soda, and salt, mixing well after each addition. Stir in the oats, chocolate morsels, and nuts and mix well.
2) Drops by rounded measuring Tablespoons onto ungreased cookie sheet and bake 9 to 10 min for a chewy cookie or 12 to 13 min for a crisp cookie. Cool on a cookie sheet for 1 min then move to a wire rack and cool completely. Store Tightly Covered.

1 1/3 cups sugar
1 teaspoon vanilla
2 cups chopped walnuts, or pecans
1 16 oz. package chocolate chip

German Chocolate Bars

3/4 cup butter, melted
1 package French Vanilla cake mix
1 egg
2 1/2 cups quick cooking rolled oats
2 15 oz. container Coconut pecan frosting
1 12 oz. package chocolate chip
1/2 cup almonds, chopped (or use pecans)
2 ounces chocolate, melted

Heat oven to 350°.
Grease 15 x 10" baking dish. Put melted butter into a bowl add cake mix and blend well. Add egg. Stir in oats. Press 2/3 of this into the bottom of the pan. Spread frosting over this as evenly as possible. Sprinkle with chocolate chips and almonds. Crumble remaining cake batter over top. Bake 25-30 minutes or until top is brown. Drizzle melted chocolate over top. Cool and cut into bars.
Don't use a cookie sheet for these or it will spill over onto your oven. I use my lasagna pan.

Grandpa Mike's Molasses Cookies

1 cup brown sugar
3/4 cup shortening
4 tablespoons sorghum, molasses
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon cinnamon
1 egg

Sift dry ingredients together. Cream brown sugar and shortening; add molasses and egg, stir in dry mixture.
Shape into balls about the size of walnuts and dip tops in sugar. Bake 12-15 minutes at 375°. Makes 3 to 4 dozen cookies about 2 1/2 inch diameter

Lemon Bars Deluxe

2 cups flour, sifted
1/2 cup powdered sugar, sifted
1 cup butter
4 eggs
2 cups granulated sugar
1/3 cup fresh lemon juice
1/4 cup all-purpose flour
1/2 teaspoon baking powder
powdered sugar to dust

Sift together 2 c flour and 1/2 c powdered sugar. Cut in butter until mixture clings together. Press in 13x9x2-inch pan. Bake at 350° till lightly browned, about 20-25 minutes.
Put eggs, sugar, and lemon juice in blender. Blend until thick and smooth. Sift 1/4 c flour and baking powder and add to blender, blend to combine. Bake at 350° for 25 minutes. Pour over crust. Bake at 350° for 25 minutes. Sprinkle with powdered sugar. Cool and cut into bars. Makes 30.

1 teaspoon vanilla
1 cup miniature marshmallows
1 cup semisweet chocolate chips

Preheat oven to 350°. Lightly grease 8-inch square pan.
Combine butter and cocoa in heavy medium saucepan over low heat, stirring constantly until smooth. Remove from heat; stir in sugar, egg, flour, buttermilk and vanilla. Mix until smooth. Spread batter evenly in prepared pan. Bake 25 minutes or until center feels dry.
Do not overbake or brownies will be dry.
Remove from oven; sprinkle marshmallows, ant the chocolate chips over top. Return to oven for 3 to 5 minutes or just until topping is warm enough to hold together. Cool in pan on wire rack. Cut into 2-inch squares.
*Can add 1 cup coarsely chopped nuts.

Snowball Kisses

1 cup butter, softened
1/2 cup sugar
1 teaspoon vanilla
2 cups flour
1 cup pecans, ground
1 package chocolate candy, kisses
1 cup powdered sugar

At medium speed, on mixer, beat butter, sugar, and vanilla until light and fluffy. Add flour and nuts, beat on low speed until well blended. Chill dough. Remove foil from kisses. Wrap approximately 1 T of dough around a chocolate kiss and roll into a ball. Place on an ungreased cookie sheet. Bake at 375° for 12 minutes or until cookies are set, but not brown. While warm, roll in confectioner's sugar.
