Doi-er Ladykini

Ingredients:

  • Dahi (Unsweetened and hung dry yogurt) 500 gms.(16 oz.)
  • Suji (Semolina) 50 gms. (2 oz.)
  • Elaichi (Cardamom) powder ½ tsp.
  • Oil for deep frying
  • Sugar 400 gms. (14 oz.)
  • Water 3 cups

Procedure:

At the outset, prepare a sugar syrup. This is done by dissolving the sular in the water and heating the solution till it turns thick and light yellow.

Now whip yogurt, and mix semolina and elaichi powder. Mix batter well. Heat oil in a hollow pan (Kadai). Scoop out portions of the batter with a table spoon and pour into oil and fry on medium heat till deep brown. Remove the balls from oil and pour into the sugar syrup. Repeat process with other portions.

Remove the balls once they absorb the syrup. Now it is ready to serve.
