Anise Cookies


In a large bowl, beat the egg whites with the salt until stiff but not dry

Dissolve the baking soda in the warm water and add the egg whites. Fold in the brown sugar & anise seeds. Gradually blend in the flour

Preheat oven to 350°. Grease 2 baking sheets

Break off small pieces of dough and roll into small balls. Place 1 inch apart on the prepared baking sheet

Bake for 10 to 12 minutes or until firm to the touch

Transfer to wire racks to cool

Baking Notes: If you prefer, replace the anise seeds with 1/4 teaspoon anise oil or 1/2 teaspoon anise extract.
