Mchuzi wa Kuku (chicken stew)
- 1 partly cooked chicken (cut in pieces)
- half cup ghee or oil
- 2 thinly sliced onions
- I teaspoon curry powder
- 4 crushed cloves of garlic
- half teaspoon cinnamon
- 4 sliced tomatoes
- I dessertspoon tomato puree
- I small bunch chopped coriander
- juice of I lime
- salt to taste
- 4cups water
Fry onions till brown Add curry powder galic, cinamon
and fry for 2 minutes. Add tomatoes and tomato puree and cook
till tomatoes are tender Add chicken and rest of the ingredients
cover and leave to cook on medium heat for 20 to 30 minutes
serve hot with rice, chapati or ugali.
