Good Stuff

These wafers are easy to make, and great with ice cream!

SNOWFLAKE WAFERS

1/4 cup light corn syrup
1/4 cup firmly packed brown sugar
1/4 cup butter or margarine
1/2 cup sifted all-purpose flour
1/2 cup very finely chopped walnuts
1/2 teaspoon vanilla extract


Preheat oven to 325 degrees Fahrenheit. Line two cookie sheets with heavy-duty foil. In a small, heavy, sauce pan combine corn syrup, sugar and butter or margarine. Cook over medium heat, stirring constantly, until mixture comes to a boil. Remove from heat. Stir in flour and walnuts until well blended. Add vanilla, mix well. Drop by teaspoonfuls three inches apart onto foil-lined cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool thoroughly on foil, then peel off cookies. Store in airtight container. Makes 2 dozen. About 60 calories per cookie.
