Recipe: Chicken Mole
Ingredients:

3-pound frying chicken, disjointed, skinned
2 tablespoons salad oil
1 small onion, sliced
2 garlic cloves, chopped
1 tablespoon sesame seeds
1/4 teaspoon cinnamon
3 tablespoons chili powder
1 1/2 cups chicken broth
2 tablespoons peanut butter
2 tablespoons raisins
1 ounce unsweetened chocolate
Salt, to taste

Directions:

Brown chicken parts in oil in a large covered frying pan; remove
and set aside.

Add onion to pan and saute until golden brown. Stir in garlic,
sesame seeds, cinnamon and chili powder; cook, stirring, over medium
heat for 1 minute.

Add chicken broth and stir to incorporate browned bits in bottom
of pan. Pour into a blender or food processor; add peanut butter,
raisins and chocolate. Process to a smooth puree. Return sauce to
frying pan. Season with salt, if necessary. Add chicken parts
(except the breast) and simmer, covered, for 15 minutes. Add breast
pieces and simmer 10 to 15 minutes, or until chicken is tender.

Serve with steamed rice flavored with minced bell pepper.
