Pasta Primavera

Ingredients
1 Noodles (which ever you prefer, I think Bowtie work great)
Method
1) Pre-heat oven 425/450 degrees.
2 Red Peppers
1 Yellow Pepper
1 Orange Pepper
5 Carrots
1 Zuccini or Squash
1 Large Onion
4 Chicken Breasts (optional - I think they are a great addition)
garlic powder, salt, pepper, oregano, basil to taste
Olive Oil to taste.
2) Julienne all vegetables but the zuccini
3) Julienne the Zuccini, but 2x the width.
4) In large bowl, stir all the vegetables with oil and spices.
5) Meanwhile - Bring water to a boil, with salt - to cook the noodles
6) Spread the vegetables on a cookies sheet, drizzle with oil. Cook for 20-25 minutes, until soft.
7) Cook Noodles until done.
8) If using Chicken - cook until done. Mix noodles, vegetables and chicken together.
9) Serve to greedy children
