Marinara Sauce
Ingredients
2 Large garlic cloves
Method
1) Lighly smash the garlic. Place in a large skillet with olive oil over medium heat.
1/4 Cup Olive Oil
2 lbs. very rip plum tomatoes, peeled, seeded, and chopped, or one 28-ounce can Italian peeled tomatoes, drained and choped
Salt
8 to 10 fresh Basil Leaves
2) Cook until garlic is golden, about four minutes
3) Add tomatoes and salt to taste. Bring to a simmer and cook, stirring often, until the sauce is thick. 15-20 minutes
4) Place chicken in the pan and lightly brown. Turn over chicken pieces and add mushrooms.
5) Stir in large chopped basil leaves.
6) Makes about three cups.
